Pork chop potato bake





Ingredients:


鈥?4 pork chops


鈥?1 can cream of mushroom soup


鈥?1/2 cup milk


鈥?1/2 cup sour cream


鈥?12 oz. frozen hash browns, thawed


鈥?1 cup shredded cheddar cheese


鈥?1 can (2.3 oz.) French-fried onions


Method:


In skillet, cook pork chops just until browned; remove. Combine soup, milk and sour cream. Stir in thawed hash browns, cheese and onions. Place in well-greased baking dish. Arrange pork chops over hash browns. Bake, uncovered at 350 degrees for 40 minutes, or until done.
well if your using pork loin(all white meat) it is good in baked beans,sauerkraut ect.. buttroast is mixed %26amp; best served as a roast. how u cook it is an individual freedom.myself i like to get out the grill %26amp; bbq sauce-get er done.
Pork Tenderloin Piccata


Ingredients:


1/4 cup all-purpose flour


2 tablespoons yellow cornmeal


1/2 teaspoon salt


1/4 teaspoon ground black pepper


1 pork tenderloin (about 1 pound)


1/4 cup butter or margarine, divided





1/2 cup chicken broth


2 tablespoons lemon juice


2 teaspoons lemon zest


1 garlic clove, pressed


1 tablespoon snipped fresh parsley


2 tablespoons capers, drained and rinsed (optional)








Directions:


1.Combine flour, cornmeal, salt and black pepper in shallow dish. Slice pork into eight 2-inch-thick slices. Place one slice into a resealable plastic food storage bag. Using flat side of Meat Tenderizer, flatten pork to a 1/4-inch thickness. Coat both sides with flour mixture, shaking off excess. Repeat with remaining pork slices; discard any remaining flour mixture.


2.Heat large (10-inch) skillet over medium-high heat until hot. Place 3 tablespoons of the butter in skillet; swirl until melted. Add half of the pork slices to skillet; cook 3 minutes on each side or until pork is golden brown and centers are no longer pink. Remove from skillet to platter; keep warm. Repeat with remaining pork.


3.Add broth, lemon juice, zest and garlic to skillet. Heat over medium heat 1-2 minutes. Add remaining butter to skillet; swirl until melted. If desired, sprinkle parsley and capers over pork. Carefully pour sauce over pork slices; serve immediately.





Bisteces Rellenos (Stuffed Steaks)


Rolled, tender, thin slices of beef hold a flavorful cheese filling and are served in a rich warm tomato sauce.





Steaks


1 1/2 pounds thin beef sandwich steaks


1 cup margarita mix


1/4 teaspoon each salt and pepper





Filling


6 ounces Manchego cheese, grated (1 1/2 cups)


1/4 cup finely chopped onion


1 poblano pepper, roasted, seeded, peeled and chopped





Sauce


1 can (14.5 ounces) petite diced tomatoes


1 can (7 ounces) salsa casera


1 tablespoon Worcestershire sauce (optional)


1 garlic clove, pressed


2 tablespoons chopped fresh cilantro








1.Gently pound steaks to 1/4-inch thickness. Place steaks and margarita mix in large, resealable plastic food storage bag. Close securely and marinate 1 hour; turning bag occasionally.


2.For filling, grate cheese using Deluxe Cheese Grater; place in Small Batter Bowl. Finely chop onion and poblano pepper using Food Chopper; add to batter bowl.


3.Remove steaks from marinade, discard marinade. Place one steak on Cutting Board. Season with salt and pepper. Place about 1/4 cup of filling along bottom edge of steak. Starting at bottom, roll steak up. Cut steak into pieces about 4 inches long. Use wooden picks to secure ends of steak rolls. Repeat with remaining steaks.


4.Place (10-inch) Skillet over medium-high heat. Spray with vegetable oil. Cook steak rolls about 3 minutes turning frequently, until browned on all sides. Remove steak rolls from skillet; set aside. To skillet add diced tomatoes, salsa casera and Worcestershire sauce, if desired, and garlic pressed with Garlic Press; cook and stir 2-3 minutes. Reduce heat to medium low; stir in cilantro and return rolls to skillet. Simmer 8-10 minutes. Serve immediately.

Cook's Tip: Beef sandwich steaks are sometimes referred to as minute steaks and are very thin slices bistec de aguay贸n cut along the grain.
Stuffed Pork Chops





2 C. frozen Corn


2 C. White Bread Crumbs


1/2 tsp. Seasoned Salt


1/4 tsp. Pepper


1 Tbsp. chopped Onion


2 Tbsp. chopped Parsley


1 Tbsp. Butter


1 Egg, beaten


1 C. chopped Apple


1/2 C. Cream


1 tsp. Poultry Seasoning


Dash Cayenne Pepper


8 2-inch rib pork chops


1 C. Chicken Stock or Water


Preparation:


Heat oven to 350 degrees. Mix corn crumbs, and seasonings. Saut茅 onion and parsley in butter. Add corn mixture with egg and apple. Stir in cream. Slit pork chops to form pockets. Stuff pockets in chops with stuffing mixture and brown on both sides in a heavy skillet. Sprinkle with salt and pepper. Pour one-cup stock or water in pan, cover and bake at 350 degrees for 1 1/2 hours or until done. Add more liquid if necessary.
Slow-cooked country style ribs


3 pounds of country style ribs


1 14.5 ounce can of crushed tomatoes


1 yellow onion coarsely chopped


2 ribs of celery coarsely chopped


1/2 tsp pepper


1/2 tsp onion powder


1/2 tsp garlic powder


1/4 tsp sage





Rinse the ribs and pat dry. Mix the spices together to form a rub. Rub the mixed spices into the ribs. Put the onions and celery into the bottom of a slow cooker, add the ribs, pour the crushed tomatoes over the top. Cook on low for 6 to 8 hours.


This recipe can be easily varied by changing the spice mixture to what ever you like. You may also just put a jar of B-B-Q sauce over the meat and let it cook. Country style ribs are very versatile.
