I have often thought of putting 2-3 hard boiled eggs in the middle, like scotch eggs.Does anybody have any good meat loaf recipes ?
I saw this in a Sunday insert in the paper once and it is so good.

1.5 pounds ground beef

1 red onion, minced

2 cups seasoned bread crumbs

3 eggs

Garlic powder, salt, and pepper

Slices of deli ham and provolone

Mix beef, onion, bread crumbs, eggs, and seasonings. Pat it out into a rectangle on a sheet of wax paper. Put down a layer of ham, then provolone. Use the wax paper to help guide you as you roll it up. Pinch the edges shut, plop it in a greased loaf pan, and bake at 350F for an hour to an hour and a half. Let it rest about 10 minutes before cutting into it or the cheese will ooze out.

Paula Deen has a recipe for Cheeseburger meatloaf. From what I remember you add bacon, cheese and ketchup to regular meatloaf.
