There are a lot of ways to eat tofu. You can have it soft (especially good in soups) or firm (best for replacing meat). I like it best pan fried with a little oil (sesame is good), cut in cubes. Fry it until it is light brown. This way, it will be chewy which works great in stirfrys and such.I would love to start eating more tofu in place of meat. What are some yummy recipes?

Tofu is so versatile. You can use firm tofu, slice it and put it in any stir-fry. Or I like to steam soft tofu and put some sauce decorated with scallion and parsley on top. You can also make tofu cheesecake too!
I use Soya Noodles (100% protein, not the mixed ones) for the regular wheat noodles. Fits with every pasta recipe.
My mom is a vegetarian, and she puts tofu in her vegetable (which consists of whatever vegetables we have in the freezer) stir fry. That, to me, is the best tofu dish.

There are a couple of great vegan cook books that have great tofu recipes in them. They are titled, 'In the Garden of Vegan' and 'How it all Vegan'. I like to make Tofu scramble for breakfast.
Saute mushrooms, red peppers, zuchini, and green onions(or whatever vegetables you like). Set that aside. Take some firm tofu and mash it up (I use my hands to crumble it). Add curry powder, tumeric and garlic. Mix it into the vegetables and fry it. I think it is yummy!
