Ah...just posted this somewhere at some point today... I was afraid to make a meatloaf other than what I have been making for years...decided to get ';brave'; and tried this! Awesome. I saw it on the food network on tv, a Bobby Flay recipe. Looked up the recipe online. It calls for zucchini as you will see...I did not have any so I grated up yellow turnip instead. Was great!

3 tablespoons olive oil

1 large zucchini, finely diced

1 red bell pepper, finely diced

1 yellow pepper, finely diced

5 cloves garlic, smashed to a paste with coarse salt

1/2 teaspoon red pepper flakes, divided

Salt and freshly ground black pepper

2 large eggs, lightly beaten

1 tablespoon finely chopped fresh thyme leaves

1/4 cup chopped fresh parsley leaves, plus more for garnish

1/2 pound ground pork

1/2 pound ground veal

1 pound ground beef chuck

1 cup panko (Japanese) bread crumbs

1/2 cup freshly grated Romano or Parmesan

1 cup ketchup, divided

1/4 cup plus 2 tablespoons balsamic vinegar

Preheat oven to 425 degrees F.

Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, garlic paste, 1/4 teaspoon red pepper flakes, and salt and pepper, to taste, and cook until almost soft, 5 minutes. Set aside to cool.

Whisk together the eggs and herbs in a large bowl. Add the meat, bread crumbs, cheese, 1/2 cup of the ketchup, 2 tablespoons of the balsamic vinegar, and the cooled vegetables and mix until just combined.

Mold the meatloaf on a baking sheet lined with parchment paper. Whisk together the remaining ketchup, balsamic vinegar, and red pepper flakes in a small bowl. Brush the mixture over the entire loaf. Bake the meatloaf for 1 to 1 1/4 hours. Remove from the oven and let rest for 10 minutes before slicing.

2 pounds lean ground beef

2 teaspoons salt

1/4 teaspoon ground black pepper

2 eggs well beaten

1/2 cup soft bread crumbs

1/4 cup finely chopped onion

1/4 cups finely diced Green peppers

1/2 cup of canned spaghetti sauce

1/2 cup Parmesan cheese

combine ingredients with hands in a large bowl ....be careful not to over work the the mixture...

cook at 350 for 1 hour....let rest 10 mins before slicing
2 lbs ground beef (uncooked)

2 boxes Stovetop Stuffing (Mushroom onion flavor is the best, but I use chicken flavor if I can't find it)

2 eggs lightly beaten

1 cup water

1 jar of mushroom gravy

Mix ground beef, stuffing, eggs, water and 1/4 of the jar of gravy. Form into 4 mini loaves and pour the remainder of the gravy over top. Cook at 350 for 40-50 minutes until cooked through.

Yummy!!
I don't like ordinary meatloaf, nor do I like to spend a lot of time in the kitchen. I always use this recipe, and my family loves it!

Italian Meatloaf

2 pounds extra lean ground beef

2 cups soft bread crumbs, loosely packed

1/2 cup spaghetti sauce, your favorite

1 large egg, lightly beaten

2 tablespoons dried chopped onion or 1/4 cup finely minced onion

1 1/2 teaspoons salt

1 teaspoon garlic powder

1/2 teaspoon dried Italian herbs, crushed, or use a mixture of oregano and basil

1/4 teaspoon pepper

3 tablespoons spaghetti sauce

2 to 3 slices Mozzarella cheese, about 2 to 3 ounces

Fold a 30-inch long piece of foil in half lengthwise. Place in bottom of a slow cooker with both ends hanging over top edge of cooker. I also put a piece of crumpled foil in the bottom to keep the meatloaf out of the fat. The foil strip will make it much easier to remove the meatloaf when it's done. In a large bowl, mix ground beef with bread crumbs, 1/2 cup spaghetti sauce, egg, onion, salt, garlic powder, Italian herbs, and pepper until well blended. Shape into a loaf. Place in slow cooker. Spread 3 tablespoons spaghetti sauce over the loaf. Cover and cook on HIGH for 2 1/2 to 3 hours or on LOW for 5 to 6 hours, or until juices run clear. Top loaf with cheese slices, overlapping, and continue to cook (turn to HIGH if necessary) for 15 to 25 minutes longer. Use ends of foil to lift out meat loaf and transfer to a serving platter.
