Any good, tasty, and fairly easy to prepare vegetrian recipes.Have recently given up meat, looking for good vegetarian recipes?

check out our local library for books on Indian cooking. I am not a vegetarian but work with a lot of Indians who are vegetarians for religious reasons, and the food they bring to potlucks is to die for.





Madhur Jaffrey and Julie Sahni are two whose books I have bought and cooked from.
I recommend going to www.recipeatlas.com. They have great recipes for a lot of things.

You might also wan to try options like cucumber sushi, mushroms, beans.
OK....this is really good: Slice veggies into slivers (carrots, red onion, red and green peppers and anything else you like) In a pan add heavy cream and lots of grated romano cheese with a little butter and simmer. Toss in the veggies and some angel hair pasta....MMMMMM!!!! I am now starving

Black beans,rice and salsa..some cheese. YUM! I eat this all the time. It is the best. It is quick, easy, cheap.
Look them up on-line or go to the library. I was a veg. for a while and I found the best stuff at the library after looking it up on-line. Also there are books that tell you how to incorporate veg. ingredients into reg. recipes without messing them up - sometimes making them better. My boyfriend will actually eat and like the things I make from them, and he's a big meat eater!
