I have a huge leek and would like to make something that uses it as the main ingredient; however, I have these restrictions and preferences:
-I don鈥檛 eat meat
-I don鈥檛 want to make latkes or other patties that must be fried
-I鈥檝e made leek soup and leek quiche in the past few months, so I prefer to not make either one again
I鈥檓 also pregnant, so the healthier the recipe, the better!

Leek in a salad would be great. Use green leaf lettuce, celery, radishes (if you can stomach them right now), tomatoes, and cucumber slices.
You can also make a leek stew without meat. Lentils are the best beens to use with leek, although any of the other beans would provide the protein you need. Throw in some corn, red cabbage, potatoes and okra. That would be really good.Do you know any good no-meat leek recipes?
Curried Leek Soup
Ingredients-
3 medium leeks, white portion only, thinly sliced
1 garlic clove, minced
2 tablespoons butter or margarine
1 (14.5 ounce) can chicken broth
3/4 cup water
1 1/2 cups thinly sliced carrots
2 celery ribs, thinly sliced
2 teaspoons chicken bouillon granules
1/2 teaspoon curry powder
1/8 teaspoon pepper
1 (12 fluid ounce) can fat-free evaporated milk
Preparation-
In a 3-qt. saucepan, saute leeks and garlic in butter over medium heat until tender. Add the broth, water, carrots, celery, bouillon, curry powder and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. Cool slightly. Place 1 cup soup in a blender or food processor; cover and process until smooth. Return to pan. Add milk; heat through (do not boil).
ROOT VEGETABLE AND LENTIL CASSEROLE
1 teaspoon cumin seeds
1 tablespoon coriander seeds
1 teaspoon mustard seeds
25 g fresh root ginger, peeled and grated
3 onions, peeled and sliced
500 g carrots, peeled and sliced
400 g leeks, washed and sliced
400 g mooli (large white radish), chopped roughly
300 g mushrooms, chopped if large
3 tablespoon olive oil
2 garlic cloves, peeled and crushed
1/4 teaspoon turmeric
175 g split red lentils
50 g brown or green lentils
1%26amp;1/4 pints boiling water
Salt and pepper
2 tablespoons chopped coriander leave
Parsley sprigs to garnish
Preheat oven to 180掳C/ 350掳F/ Gas Mark 4. Crush the cumin, coriander, and mustard seeds together. Heat the oil in a large pan. Add the onions, carrots, leeks and mooli and fry until they begin to soften. Add the mushrooms, garlic, ginger, turmeric and crushed spices and continue to cook for another 2-3 minutes. Stir constantly. Add the lentils and boiling water. Season with salt and pepper to taste and return to the boil. Transfer to a casserole dish, cover and cook for about 45 minutes or until everything is tender. Stir in the coriander and add more salt and pepper if needed. Serve hot accompanied by some greens and lots of crusty bread!
Maybe you should stop buying leeks for a while. I think you've exhausted all the usual recipes. Why not just chop it up into mac and cheese or throw it in the frying pan with whatever you are making?
