Looking for some african recipes made without meat?

I was going to make some food to bring into my french class for extra credit this friday. The dish has to be from africa though and I'd rather not have meat in the dish. Any ideas of what to make?Looking for some african recipes made without meat?
SOUTH AFRICAN CURRIED CABBAGE





1 large cabbage


1 white onion chopped finely


1 medium sized potato, diced small


1 teaspoon curry powder


1/2 teaspoon turmeric (for colour)


pinch of salt


pinch of pepper


1 tablespoon sunflower oil


70ml water





Use a medium sized saucepan and put the tablespoon of oil in to heat up.


Shred cabbage and place in saucepan with the 70ml of water.





Add the salt, pepper, onion and potato.





Make sure that the cabbage begins to soften first before adding the curry powder and turmeric, stir in and make sure all the cabbage is covered in curry powder.





Once you see the cabbage start to cook, turn the heat down a bit and place lid on pot to steam the cabbage, stirring occasionally.





Top water up as necessary to cook cabbage, potatoes and onion





OR





DELICIOUS WEST AFRICAN BLACK EYE PEAS





16 oz raw black eye peas


8 cups water


1/2 teaspoon Lawry's Seasoned Salt


1 teaspoon plain table salt


1/8 cup canola oil (palm oil is traditional but fatty)


1 onion, chopped


15 oz canned diced tomatoes (or 2 fresh)


1 1/2 teaspoon curry powder


1 teaspoon paprika








Wash black eye peas in a colander or strainer. Boil on high for 15 minutes (use a timer or watch the clock) in a 3 quart or larger-sized pot. Add 1/2 teaspoon Lawry's Seasoned Salt and 1 teaspoon table salt.


Reduce heat to medium low and simmer for about 60 to 70 minutes, stirring occasionally. The more you stir the more mushy the black eye peas will be. If you want them to be firm and well-formed, then stir only once halfway during cooking.





Appearance: The black eye peas start out white and black and become brown when completely cooked. While cooking they look alarming, as though lots of little eyes are boiling and staring at you. Because of the contrast of black and white it is strange, but as it cooks, the white of the peas turn brown and the awkward contrast is gone.





Saut茅 onion in cooking oil for 10 minutes, then add tomatoes and spices and cook for 10 minutes or so. Add this mixture to the black eyed peas and cook for about 10 minutes

AFRICAN CURRY RICE





2 tbsp. butter


1 c. chopped onions


1 c. chopped green pepper


1/2 c. raisins


4 c. chicken broth


2 c. raw rice


1/2 tsp. curry powder


1/2 tsp. salt and pepper





In a skillet stir in rice, butter and seasonings until rice is browned lightly. Add chicken broth, mix and bring to a boil. Cover and simmer 25 minutes. Remove from heat, toss lightly and serve. Rev Yosamu Sewagudde, Church of Uganda.

AFRICAN DESSERT





5 med. bananas


1 tbsp. butter


1/3 c. orange juice


1 tbsp. lemon juice


3 tbsp. brown sugar, packed


2/3 c. shredded coconut





Cut each banana in fourths. Arrange in greased 9 inch pie plate. Dot with butter. Drizzle with orange and lemon juice. Sprinkle with brown sugar and coconut. Bake at 370 degrees until coconut is golden brown, about 8 to 10 minutes. Makes 5 to 6 servings.

AFRICAN FOO FOO





8 bananas


1 tsp. nutmeg


1 tsp. cinnamon


1 beaten egg


2 c. flour


Powdered sugar





Mash the bananas well in a bowl. Stir in nutmeg, cinnamon, and egg. Add 2 cups flour and mix well. Let mixture stand for 10 minutes.


Heat a small amount of oil in a frying pan. Drop 1 tablespoon at a time of the mixture into the oil. Fry for 2 to 3 minutes on each side. Drain on paper towels and sprinkle with powdered sugar. Serve hot

AFRICAN SPINACH SALAD





1 bunch fresh spinach, well washed


2 green onions, chopped


4 strips bacon, cooked crisp and cut into sm. pieces


1 clove garlic, minced


2 soft boiled eggs


Italian dressing


Croutons





Wash and clean all sand from spinach. Tear into bite-sized pieces into large salad bowl. Add chopped onions, minced garlic and bacon pieces. Break soft boiled eggs over salad, drizzle with Italian dressing and toss well. Top with croutons before serving. Makes enough salad for two main dishes or 4 side dishes.

I'm Nigerian, but there aren't any vegetarian Nigerian meals I can think of. You can make jollof rice without meat, though. There's a recipe on that site.
