We operate a hunting club and had access to geese, a lot of geese, anyone have recipes for breast meat?

I have gotten on hgtv and all and asked several times for anyone having recipes for the breast meat, also looked in the hunting books and they prefer to give you recipes for wild boar than goose breast. help please.We operate a hunting club and had access to geese, a lot of geese, anyone have recipes for breast meat?

Sweet %26amp; Sour Goose


2 cups of packed brown sugar


2 tbsp of flour


1/2 cup of vinegar


1/4 cup of water


2 tbsp of soy sauce


1 tbsp of ketchup


One goose (boned or breasted) cut into 3/4 inch cubes


In a sauce pan mix brown sugar and flour stir well


Add remaining ingredients except goose.


Stir over medium heat untill bubbling.


Put cut up goose into crock pot(slow cooker),


Pour sauce over goose, stir,


Cook on low for 6-8 hours or on high 4-5 hours.


I use this recipe for geese which are badly shot up. Alle


Score skin with a sharp knife in a check pattern. Place skin side down in a large dry Teflon pan over medium heat until skin is crispy. Turn over onto flesh side until seared, then flip back to skin side.





Place in oven at 375 degrees F until internal temperature is 140 degrees F. Remove from pan and place skin side down on paper towel and let sit for 15 minutes.





Remove from paper towel and place on cutting board. Slice into ¼” slices and “fan out” on plate, add sauce (recipe follows). Serve immediately.
when I used to hunt we would breast out the goose, 4 whole breasts .soak them for 6 hours in a mix of half gallon water, bottle of white wine 4 table spoons of salt and 8 bay leaves, 20 pepper corns and 2 chopped onions. remove marinated breasts to a large crock pot[do not reuse marinate] add 8 cloves of garlic,3large yellow onions,a pound of carrots chopped course,1 head of celery chopped course, 2 cans tomato paste, cover it all in a 50/50 mix of white wine and water cook low covered 3 hours,uncovered low 2 hours, serve with hash browns or potato pancakes
