I'm a vegetarian and my mom's menus consist of tons of meat. I'd like to be able to have meals that will keep me healthy but without all the meat. Got any suggestions?What are a few good recipes using all natural foods, that excludes meat?

VEGETARIAN CHIMI CHANGAS
2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10'; tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt
In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2'; inch of cooking oil. Warm the 10'; tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!!
SPICY VEGETARIAN CHILE
1 to 5 habanero peppers (your heat preference)
4 carrots
2 stalks of celery
1 granny smith apple (takes the heat off the habanero)
1 red onion
陆 spanish onion
2 to 3 cloves of garlic / add more if you wish
4 tablespoons olive oil / more or less, up to you
1 28oz can tomato sauce
1 6oz can tomato paste
2 15oz cans diced tomatoes
1 can red kidney beans
1 can black beans
1 can pink beans
4 tablespoons black pepper / or to taste
4 tablespoons salt / or to taste
8 tablespoons chili powder / or to taste
2 tablespoons cayenne pepper
6 tablespoons of sugar (takes the acid out of the tomato)
Peel then grate the carrots with the large end of the cheese grater. Do the same with the celery (don't peel me) and the Granny Smith apple.
Dice the onions and slice the garlic. Remove seeds and chop the Habanero peppers into small or large pieces, your preference.
Brown the garlic and the onions for about 7-10 minutes. (Note: be careful not to overbrown garlic!)
Add the grated carrots and celery and cook for a few minutes more.
Add spices, beans, tomato sauce and tomato paste. Let the paste dissolve into the sauce then add the sugar. Then add the chopped Habaneros and simmer for 20 minutes.
If you are using 5 this chili is super hot. If you like it this way forget the Granny Smith. Add the Granny Smith apple and cook for 10 minutes more. The Granny Smith gives it even more body and a thick Chile results.
Makes Five Quarts.
Serve and Enjoy.
NOTE: For Meat eaters just replace the Granny Smith Apple with pieces of meat or chopped meat, around a pound and a half.
VEGETARIAN SPRING ROLLS
20 sheets spring roll wrappers
2 carrots
1 white cabbage
1 cup dry flavoured soy mince
300 g beansprouts
salt pepper
oil for frying
for dip:
soy sauce
white vinegar
Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.
Wrap into spring roll sheets and then fry in oil.
Delicious with a soy sauce and white vinegar dip.
VEGETARIAN NACHOS
1 bag Nacho Cheese Doritos
1 cup shredded Colby cheese
1 jar Pace Picante Sauce (chunky)
1 jar jalepenos
2 tbs. sour cream
1 small can black olives
Take about 20-25 chips and place onto a microwavable safe plate.
Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).
Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.
Serve. Enjoy this fast and easy dish. It's a great meal at a cheap price for larger families. The kids will love it. Add lettuce or any other variety of ingredients to your liking.
VEGETARIAN POTATO AND LEEK SOUP
4 - 5 organic Yukon potatoes
2 whole leeks
4 cups vegetable stock
1 tsp freshly ground nutmeg
freshly chopped chives (for garnish)
salt and pepper, to taste
Cube the potatoes and bring them to a boil in the stock.
When potatoes are almost finished, finely chop the leeks and saut茅 them a small amount of olive oil until they have softened and are sweet. Add leeks to potatoes. Cook for a few more minutes until potatoes are soft.
Add nutmeg, puree whole mixture in a blender. Serve garnished with chives and a drizzle of olive oil.
VEGETARIAN LASAGNA
1 medium eggplant, fresh
1 pkg. frozen spinach
1 pkg. lasagna noodles
1 pkg. (pint, sm. one) low-fat cottage cheese
1 jar Favorite meatless sauce
1 sm. pkg. Mozzarella lite cheese
Salt and pepper
Several plump tomatoes
Parsley flakes
Defrost spinach, drain as much water out with a colander as possible. Cut eggplant in rounds thinly sliced, lay on paper towels and lightly salt, lay another paper towel on top and continue layering with eggplant rounds, salt, paper towel etc. Place a heavy pan on a cookie sheet on top of stack, let sit for at least 1/2 hour toWhat are a few good recipes using all natural foods, that excludes meat?
Here's a suggestion: cook for yourself. It's not fair to ask your mom to prepare an entire special meal for you. Now, some meals are easy to make vegetarian and non-vegetarian.
Some easy things you can cook (or request, that aren't difficult to alter to be veg/non-veg):
Pasta (buy plain marinara sauce, set some aside for you, then let mom put meat into the rest; make alfredo sauce, mom can put chicken or whatever on top of hers)
Stir-fry (cook the meat separately)
Chili (just divide the ingredients in half, cook half in just oil, the other half in with the meat)
Curry (same as chili, or cook the meat separately)
Tacos (buy and heat a can of vegetarian refried beans for yourself... build your own)
Baked potato bar (put on whatever you want, skip the bacon, use leftover chili)
Sandwich bar (grab some hummus for you, or just use cheese)
Your favorite meal (sub fake meat for you, they use the real stuff)
Breakfast for dinner (skip the meat)
Grab a copy of The Flexitarian Table for a bunch of menus with recipes that can be easily made vegetarian or non-vegetarian.
Fill up on any and all raw (easy to prepare) veggies: sweet %26amp; hot peppers, summer squash, pea pods and sugar snaps, eggplant, cucumbers carrots, beets, celery ... do you have all day? One way is to put a little salad dressing in a small dish and use it for dip. Another is to wrap the veggies in a torilla, pita, or other soft bread. However you work it, be sure you don't create extra work for other family members. Try to get more involved in shopping and cooking even if you don't like dealing with the meat. You will never convince people that your ideas are good if you are unpleasant or pushy.
Just ask your mom to cook the food without meat, or if she made chicken, corn on the cob, and mashed potatoes, than only eat the corn on the cob with mashed potatoes.
