Running out of ideas for tea! Help!!Any good recipes without meat?
Your best solution is to go through the cookbooks of different nationalities and look THERE for the recipes that don't contain meat. These will almost always be better than vegetarian cook books which sometimes are great, but the majority of the time are terrible...
Also do you mean you eat fish? Do you eat eggs, cheese, butter etc...
Do you like spicy food. Are you allergic to anything!!!!
So I will assume you're a non-fish eater but do eat eggs and dairy...
Try this, very simple but very tasty.
Risotto Alla ';Romana';
2 cups of arborio rice
250 grams of pecorino romano (parmesan will do)
5 fresh and ripe tomatos
2 shallots
1 lime
1 can of tomato pulp
olive oil
salt
pepper
First get a pot of water and add half the tomato pulp, salt and pepper to taste. This is your stock for later.
Dice the shallots really finely and add them to the arborio, fry the rice with the shallots for about 4 minutes on a high flame. [this makes the rice less mushy at the end]. Add the fresh tomatos (very finely diced) to the pan and add four ladle fulls of your stock. Let the rice cook at a high heat, but make sure it does not stick by constantly monitoring the level of water [stirring is not essential, but you will find your yourself doing it]. As the rice starts to feel like it's almost done i.e. soft on the outside but with a white and powdery core. Now add, the juice of half a lime, the grated pecorino romano. Stir it in and immediately turn the heat off, leave the risotto to sit for 2 minutes.
The lime juice adds a sharpness, but it won't taste at all like lime.
Anyway, let us know more what you were in the mood for
