I'm not a lover of meat and find i eat too much pasta and rice so need some recipes that you've tried and tested which don't have any of these things in. I eat fish but nearly everyday so without fish would be great too. I welcome any links to sites. ThanksAnyone have some great recipes without meat, pasta or rice, so basically something vege?

Do you like tofu? Because thats usually what I use to replace meat.
I'm a big fan of tofu stir fry. This is one of my favorites.
Tofu Peanut Stir Fry
INGREDIENTS
* 1 teaspoon vegetable oil
* 1 (16 ounce) package frozen stir-fry vegetables
* 1/2 teaspoon minced fresh ginger
* salt and pepper to taste
* 2 eggs, beaten
* 1 cup cornstarch
* salt and pepper to taste
* 1 (14 ounce) package firm tofu, drained and cubed
* 1/2 cup vegetable oil
* 3/4 cup peanut sauce
* 1/4 cup chopped peanuts
DIRECTIONS
1. Heat the oil in a large skillet or wok over medium heat, and cook the vegetables until tender. Mix in the ginger, and season with salt and pepper. Remove vegetables from skillet, and set aside.
2. Place the eggs in a bowl. In a separate bowl, mix the cornstarch, salt, and pepper. Dip tofu cubes first in the egg, then the cornstarch mixture to coat.
3. Heat the remaining oil in the skillet or wok over medium heat, and cook the coated tofu 5 minutes, or until golden brown. Stir in the peanut sauce and peanuts. Continue to cook and stir until sauce has thickened and tofu is well-coated. Serve with the vegetables.

You could try using carrots/parsnips/zucchini instead of pasta. I use a potato peeler to make 'noodles' out of them. You could get a spirooli to make them even more like pasta. And there's a really great marinara sauce made from fresh tomatoes, soaked sun-dried tomatoes, italian seasoning, evoo, and some fresh basil, I like to add some walnuts to it as well.
As for rice, use a food processor to chop up cauliflower or parsnip to use anywhere you'd have rice.
Roasted Delicata Squash with Cumin
2 Delicata Squash
1/2 to 1 tsp ground cumin
1 to 2 tablespoons extra virgin olive oil or coconut oil
Sea salt to taste
Lots of fresh cracked black pepper
Directions
Preheat oven to 400F. Halve both squash lengthwise and scoop out seeds. Slice the halves crosswise into 1/2'; pieces and put into a large bowl. Add the oil, cumin, salt and pepper then mix well with your hands to thoroughly coat each piece with the oil and seasonings. Place squash slices in a single layer on a cookie sheet and place on the middle rack in the oven. Bake for 30 minutes or until the squash is tender and starting to brown.
Serves 4 as a side dish.
Creamy Tomato and Butternut Squash Soup
1 butternut squash (1/2 cup pulp)
1 tomato (1/2 cup juice)
1/4 cup plus 3 tablespoons plain dairy or soy yogurt
3/4 cup chopped tomatoes
2 tsp fresh dill
1/4 tsp sea salt
1/4 tsp balck pepper
2 tbsp plain dairy or soy yogurt, as garnish (optional)
2 tbsp dairy or soy parmesan cheese, as garnish (optional)
2 springs fresh dill, as garnish (optional)
1. Separately push the squash and tomato through a juicer. Set aside 1/2 cup of the squash pulp and 1/2 cup of the tomato juice.
2. In a medium sized saucepan, combine the pulp, juice, and yogurt. Bring to a simmer over medium low heat, and cook uncovered for 10 - 15 minutes.
3. Add the chopped tomato, dill, salt, and pepper, and remove from the heat.
4. Serve hot or cold, garnished with the yogurt, parmesan cheese, and dill sprigs, if desired.
Dont forget things like cous cous, which needs some stock to make it tasty, but is so easy for everyday. Serve with something flavoured with ras el hanout to give a lovely warming Moroccan flavour.
You could also try something like Aubergine stuffed with red lentils and apricots for a good balance.
You can get ras-el-hanout and loads of other exotic spices to update your storecupboard at the source below and I also love recipezaar as you can put in ingredients you already have and it gives suggestions. I always go there first.
Couscous with apple, apricot, onion, mint and parsley. Stuffed baked aubergines - filled with whatever you want. Pumpkin pie/soup. You can be more adventurous with vegetables than you can with meat so just go for it.
