our family is not vegitarian, but a lot of the time we just prefer entrees without meat. once in a while i just make a dinner of all side dishes! :D

eggplant sandwiches. idk the exact recipe but it it's an open-faced sandwich roll with cooked sliced eggplant and red bell pepper, garlic, oregano, and olive oil. melt mozzerella cheese on top. extremely tasty!Anyone have any good no-meat recipes?
Black bean tacos. They come in a can or you can cook your own. Use packaged shredded cabbage instead of lettuce, grated cheese, homemade salsa. Add avocado if you like.
Very easy to make.
Try this, get some pizza bread, let it rise(double in size) as it's rising saute some spinach in olive oil and lots of fresh garlic. Let the spinach (if using frozen)drain.
Roll out the dough to look like a medium size pizza..place the spinach (make sure to taste for enough garlic flavor).
Roll the dough..like a jellyroll..take a beaten egg and apply to the rolled dough..put in oven at about 350 until the dough looks like a loaf of home made bread..nice and medium brown.
Cut and enjoy!
PS. since spinach has the habit of shrinking when cooked as a guide I would use 5packages of frozen.
i always like to make anything with eggplant, my favorite is a version of eggplant lasagna: you use eggplant rounds instead of noodles, it is hearty and delicious, and manly enough for my eat-meating hubby but one my vegetarian friends love also!!!
-slice eggplant 1/4-1/2 inch thick rounds
-soak for approx. 30 minutes in salted water to remove moisture
-pat rounds dry with paper towels
-dredge rounds in flour seasoned with salt %26amp; pepper
-coat in eggwash (beaten eggs with a splash of water or milk)
-dredge in seasoned breadcrumbs (i like progresso italian style breadcrumbs) shaek off excess
-place on cookie sheet/jelly roll pan and bake in oven at 375 for approx. 20-25 minutes until golden brown (turn over half way through) -- by baking the eggplant instead of frying you will cut out a lot of uneeded oil and fat, you can spray the cookie sheets with fat free pan nonstick spray
-once you have the eggplant ready you can assemble your lasagna::
you will need:
3-4 cups tomato sauce (homemade or jar)
cheese of your choice (ricotta, mozzarella, parmesan, etc.)
veggies of your choice (spinach, squash, peppers, whatever your family likes...you could even use shredded chicken if you like)
9x13 baking dish
-start with about 1/2 cup tomato sauce in the bottom of your baking dish
-do a layer of eggplant
-do a layer of veggies of your choice
-do a layer of your cheese blend of choice
-top with another 1/2-3/4 cup of sauce
-repeat and complete with 3 layers
-top lasagna with extra cheese and sauce
-bake at 375 for approx. 45 minutes or until casserole is bubbly and cheese is melted
use your own combination of spices and veggies to tailor make this dish, it can be fun!

This is a recipe I use made with Cuban Black Beans
1lb black beans
1qt of water
2 T olive oil
1/4 C fresh cilantro chopped well (not packed)
Juice of I lime
1T oregano
1 large clove garlic chopped
I chopped jalapeno pepper
1 bay leaf
Cook slowly for 2 hr or longer. Add water if needed, but by the end you do not want the water to cover the beans. Cool and put in a blender and chop so that most of the the beans are not whole but also not a puree. Place back on low heat to thicken and assemble the items below stir occasionally.
Prepare salsa of
1 small onion chopped
2 tomatoes chopped
1 clove of garlic
2 T chopped cilantro (or to taste)
1 chopped jalapeno pepper (or to taste)
salt to taste
lime juice
Mix well
1 Avocado sliced (toss in lime juice to keep from getting black.
Sour Cream
Warm Tortillas.
Assemble as follows
Place 2-3 T. of the black beans in the warm tortilla. Top with Salsa, Avocado Slice/s and a spoonful of sour cream. Leave open or wrap as a burrito. Enjoy.
