Clams and Chorizo with Tomato and Garlic
1. 2 garlic cloves, minced
2. 1/4 pound sweet or hot Spanish chorizo (spicy cured pork sausage), cut into 1/4-inch dice
3. 2 tablespoons extra virgin olive oil
4. 2 (14 ounce) cans stewed tomatoes
5. 4 pounds littleneck clams (2 inches in diameter), scrubbed
1. Cook garlic and chorizo in oil in a 4- to 6-quart heavy pot over moderate heat, stirring occasionally, until garlic is golden, 1 to 2 minutes. Add tomatoes and bring to a simmer, breaking up any large pieces. Simmer, uncovered, stirring occasionally, until sauce is thickened, about 15 minutes.
2. Stir in clams and cook, covered, over moderately high heat, stirring once, until clams open, 9 to 12 minutes. (Discard any that have not opened after 12 minutes.) Serve immediately.

GARLIC CLAMS
12 Cloves fresh garlic, minced
1 Bunch green onions, minced
1/2 c Butter
1/4 c Vegetable oil
1/2 c Chopped parsley
1 t Italian seasoning
1 c Dry white wine
1 c Clam juice
1 c Water
24 Cherrystone clams, cleaned
In large skillet, saute garlic and onion in butter and oil for 1 minute.
Add parsley and seasoning. Add wine, clam juice and water and cook 2
minutes. Now add clams and cook covered until clams open, about 10
to 12 minutes. Serve in bowls.
Linguni a le vongole. Add it to a basic red sauce with plenty of garlic, and add chopped parsley at the end. I dont' serve parmesan with this one.
deep fry it in beer batter. poor a can of light beer into a bowl mix with 1 and 1/3 cup of flower... ad a teaspoon of paprika... and pepper to taste then deepfry for 3 minutes.
clam and vodka sauce. make a pink vodka sauce i dont remember a recipe i just make it from scratch. add the clams and let it simmer for a while add over pasta and chicken cutlet and voila.
i persoannly like the vodka option better

戮 cup Clam meat
3陆 ounce Ground beef
1 tablespoon Sesame oil
陆 cup Soy bean sprouts
2 ounce Bracken fern (kosari); presoaked
1 Bunch watercress
2 tablespoon Soy sauce
3 cup Raw rice
2 Hot red peppers
1) Remove intestines from clam meat. rinse in weak-salted water and drain.
(2) Cut off long, hairy ends of soy bean sprouts, wash, and drain.
(3) Discard tough stems from presoaked brackens. Cut off root and leaves from watercress and cut into 1-1/2 inch pieces.
(4) Wash rice and soak in water for 1 hour. Cut red peppers in half, remove seeds, and chop.
(5) Add sesame oil to pan and saut鈥?clam meat on high heat. Add ground beef to clam meat and saut鈥?together.
(6) Add 2 cups (40Occ) water to (5) and bring to boil hard. Add soy bean sprouts and brackens and boil 10 minutes again, seasoning with soy sauce.
(7) Drain rice in colander, pur鈥歟 in blender, add chopped red peppers, and pur鈥歟 together.
(8) Add (7) to (6) and stir well. When mixture thickens and binds together, add watercress and cook 1 minute until it is done.
*CRAB MEAT CLAM CHOWDER
For 4 servings you will need:
2 tbsp. butter
1 clove garlic, peeled, optional
3/4 c. sliced green onions
3 sm. potatoes, cut into 1/2 inch cubes
1 c. water or dry white wine
3 c. milk
1 tsp. salt
1/4 tsp. white pepper
4 tbsp. all-purpose flour
4 tbsp. water
1 pkg. (6 oz.) frozen crab meat, thawed
1 can (8 oz.) minced clams, juice included
1 c. whipping cream, whipped, salted
Minced chives or parsley for garnish
1. Melt butter in heavy saucepan. Add garlic. Saute for 30 seconds. Add onions and potatoes. Saute 2 minutes or until vegetables are heated through.
2. Add water or wine. Simmer 15 minutes or until potatoes are cooked. Stir in milk, salt and white pepper. Bring to a boil.
3. Mix flour with 4 tablespoons water to make a smooth paste. Stir into boiling mixture. Cook about 3 to 4 minutes until thickened.
4. Stir in crab and clams, including juice. Heat through.
5. Serve garnished with a dollop of whipped cream and a sprinkling of chives or parsley.

In shallow bowl, combine flour and salt. In separate bowl, beat egg with milk. Place cracker crumbs in third bowl. Dip each clam into flour mixture, then into egg mixture; dredge lightly with cracker crumbs. Pour oil into deep-fryer or saucepan to depth of about 2 inches. Heat until oil is 375酶F or until 1 inch cube of white bread turns golden brown in 50 seconds. Deep-fry clams, a few at a time, for about 2 minutes or until crisp and golden brown. Drain on paper towels and serve garnished with lemon wedges. Makes about 6 snack-sized servings. *Substitute some of the juice from shucked clams if available.
Pasta sauce, i think you call it 'vongole', use crushed tomatoes, olive oil, pinch of salt, chopped onion, sprinkle of parsley, garlic; nice quick meal.
Linguine with white clam sauce.
1 lb linguine
2 tbs chopped garlic
1/2 C olive oil
1 tsp chopped parsley
1 C whole clams (or 20 fresh clams)
Cook spaghetti. Heat olive oil in a pan and cook garlic until brown. Then add parsley and clams. Cook until heated through. Add one tablespoon of sauce to cooked and drained spaghetti and saute for a minute or two. This gives the spaghetti more flavor. Pour the rest of the sauce over the spaghetti. Mix together and serve.
for red sauce, add:
1 cup of drained tomato
the juice of the clams
1/4 tsp pepper
reduce the parsley to 1/2 tsp.
1/4 tsp oregano
Cook spaghetti. Heat olive oil in a pan and brown garlic. Then add parsley, drained tomatoes, pepper, and oregano. Add clams and juice. Cook 5 min until sauce thickens. Add 2 tablespoons sauce to cooked and drained spaghetti and saute for a minute or 2. Next pour the sauce over the spaghetti, mix, and serve.
I prefer the white sauce; although, I usually use anchovies instead of clams.
CLAM DIP
1 (8 oz) can minced clams
1 (8 oz) pkg. cream cheese, softened
1/2 c. sour cream
3 dashes Worchestershire sauce
1/4 small onion, diced
salt %26amp; pepper
Mix all ingredients together very well and refrigerate. Serve with crackers to dip.
Why don't you try this on English muffins, and put it in the broiler? Maybe with some shredded mozzarella on top... Or stuff some Portobello mushrooms and top with cheese and bake them.....
