This delicious bacon-wrapped meatloaf is enhanced with grated natural Parmesan cheese, Cajun spices, and a tasty barbecue sauce glaze.
INGREDIENTS:
4 strips lean bacon
2 teaspoons brown sugar, optional
1 pound lean ground beef
1/2 pound ground pork
1 medium onion, finely chopped
1 red or orange bell pepper, finely chopped
2/3 cup fine dry bread crumbs
1 large egg, slightly beaten
1/3 cup grated fresh Parmesan cheese
1 teaspoon Cajun seasonings
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup evaporated milk or whole milk
1/2 cup barbecue sauce
PREPARATION:
Cut bacon strips in half crosswise and coat with the 2 tablespoons of brown sugar. In a large skillet, cook the sugared bacon for about 2 minutes to render some of the excess fat. Or, cook on a paper plate in the microwave for about 1 minute.
Heat oven to 350掳.
Line a baking pan with foil and lightly oil the foil or spray with nonstick cooking spray.
In a large bowl, combine the ground beef, pork, onion, bell pepper, bread crumbs, egg, cheese, Cajun seasonings, Worcestershire sauce, salt and pepper, and milk. Put the mixture on the
prepared foil-lined baking pan and shape into a loaf.
Spread barbecue sauce over the loaf and arrange the bacon strips over the top.
Bake until bacon is crispy and meat loaf is firm, about 1 hour to 1 hour and 10 minutes. Let stand for 10 minutes before slicing or moving to a serving platter.

My favorite meatloaf recipe (approximate, because it's from memory):
1/3 lb ground turkey
1/3 lb ground pork
1/3 lb ground beef (I like to use ground sirloin)
3-4 slices of bread, torn into small pieces
1/4 t dry mustard
2 t salt
2 T dried parsley or 2 t fresh, minced
some chopped celery and onion, sauteed in olive oil
1 t worchestershire sauce
3 egg
some milk (to add moisture if it needs it)
Mix it all in a bowl, shape it into a loaf, and bake it, preferably on a broiler pan or a rack (so the drippings drain away) at 350 for about 45 minutes - 1 hour. You can also add bacon strips to the top before putting it in the oven.
I usually buy 1-lb packages of the meat and mix them, divide them, and freeze 2 for later. Or you can make a giant meatloaf, but cook it longer (1 1/2 hours to 2 hours for all 3 lbs of meat).
The bread and the mixture of meats make it taste lighter than if you only used beefCan you give me some good meat loaf recipes?
CHEESE LOVERS MEATLOAF
2 pounds chopped meat
2 slices of bread
1 large onion
1 cup tomato sauce
1 egg
1 bag of mozzarella cheese
1/4 cup of tomato sauce
Dash of salt and pepper
In mixing bowl add chopped meat, diced bread, diced onion, egg, 1/8 cup of tomato sauce, salt and pepper (mix).
Place in large pan pat to shape. Top with the rest of the tomato sauce.
Bake for 55 minutes at 350 degrees.
Take out and spread out bag of cheese on top of meatloaf and put back in oven until cheese is melted

My family loves my meatloaf, it's also pretty easy.
2lbs extra lean hamburger or ground turkey
2 eggs
1 cup oatmeal
1/2 cup seasoned bread crumbs
1 1/2 teaspoon salt
1/2 teas. ground pepper
1/2-1 teas. garlic powder, not salt
1 pkg dry onion soup mix
1 small can tomato sauce
Ketchup
Mix all ingredients together well with your hands. Place in a large 9x13 cake pan, shaping into a loaf shape in the middle of the pan, don't make it too thick. Bake at 350 degrees for an hour to an hour and a half. After a half hour spread the top of the meatloaf with ketchup and continue baking until done.

To two pounds of meat add: 1 egg, 1/2 of a chopped onion, several squirts of ketchup, two shakes of ';liquid smoke';(available in the grocery aisle next to the worsteshire sauce) 1 teas. of dry mustard and a squirt or two of honey. (The honey gives the meat great moisture!) Take up the moistness with crushed crackers until the mixture holds together without being dry. Shape into a rectangular loaf and put in a glass pyrex dish sprayed with ';Pam.'; The glass pyrex makes for a more moist meatloaf but an iron skilllet works as well. Meat may be covered with foil and cooked for approximately 1 hour at 350 and the last 15 min. take the foil off for browning.
