Pretty much any recipe that you would use lamb for is transferrable to goat meat. They have a similar taste and texture.
goat curry....it is a Jamaican dish....very popular and certainly can be found a cook book featuring island foods.
In addition to the answers for cuisines of other countries, you can also see about researching historical cooking. While less than likely to be served at the high table of the lord, it would have been served for those further down in the ranks. I have several renaissance and medieval cookbooks that, while not specifically referencing goat meat, could use it in a number of the listed resipes as an alternative. I've also done some ';freestyle cooking'; with it and find it a tasty alternative to beef and pork.

Fried Sausage and peppers is just that..no sauce unless you add it.
Saute the Sausage. Remove from skillet. Add the onions and bell peppers to the skillet and saute them until they are as tender as you'd like them to be.. Serve on warm, crisp rolls..

1 pkg. (6 oz.) OSCAR MAYER Italian Style Chicken Breast Strips
1 slices pepper
COOK pasta as directed on package.
MEANWHILE, mix pepper, mix sauce and chicken breast strips in small saucepan. Cook on medium heat 4 min. or until heated through, stirring occasionally.
DRAIN pasta; place in large serving bowl. Add chicken mixture; toss to coat.
TALIAN MEAT SAUCE
1 (28 oz.) can Italian tomatoes with basil, crushed
1 (16 oz.) can tomato sauce
1 (8 oz.) can tomato sauce
1 (16 oz.) can tomato puree
1 (8 oz.) tomato paste
1 c. sliced mushrooms

Help with diet/recipes that contain little to no meat?
I was raised in a meat-loving family so I never was used to eating salads, nor do I know how to make vegetarian meals.
Now I have a medical condition that requires me to lay off red meat completely, and to have very minimal white meat.
I'm allowed to have some free range fish and eggs, but the diet is supposed to be based on vegies, lentils, chick peas, and such.
Please share some of your vegetarian recipes or links to help me out.

Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs.
Amy's Indian food or Trader Joe's Indian Food (Dal) with rice.
Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad.
Hummus, pita bread and a salad.
Gardenburger Breakfast Bacon - make a BLT add avacado.
Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar. Leave out to room temp until cheese is 'melted' looking.
Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard.
Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad.
Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down.
Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad.

To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice 鈥?Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada 鈥?add lettuce, tomatoes, soy cheese and avacado to the top.

Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.

You like chick peas? Well lately I have been on a hummus kick - I bought some roasted garlic hummus (you may have to try a few brands to find what you like.... or you can make your own using a variation of the recipe found here: http://mideastfood.about.com/od/middleea鈥?/a>
Ingredients

1/4 cup corn (optional)
1/2 cup fresh green beans (optional)
1/2 large bottle V-8
4 cups water
1 tablespoon pepper
salt to taste (about 2 tsp usually, but do it slowly as it cooks so you don't over salt as every pot is different and you don't want too much salt!)
1 tsp thyme
1 tsp italian seasoning (or your own combination of basil, oregano, bay leaf, etc)
First add your garlic, carrots, onion, and celery, spices, and a sprinkle salt and pepper (NOTE - at this point you can add any other herb you want - sometimes I use tumeric and curry for a differnt spice)and water and bring to boil.
Boil all of this for about an hour - till vegetables are 1/2 done, still a bit firm to the bite. The onions will be clear and the water will be a murky color. This is your broth.
Now add everything else, and a bit more water if needed and cook for another hour or so.
This should make enough for about 8 servings and freezes great!

Cook pasta according to package directions.
Drain, rinse with cold water, and drain again.
Combine vinegar, oil, sugar, salt, dillweed, pepper and water.
Cover and shake well.
In a large bowl, combine pasta, cucumber, celery, and onions.
Add dressing, and toss to coat. Cover and chill.
Serves: 16
Preparation time: 90 min (prepare a day in advance)

In a heavy pot, melt butter with olive oil over low heat.
Add garlic and cook 2 minutes; be careful not to burn.
Add bread to pan and toss.
Add wine, stock, and parsley.
Bring to a boil over medium heat, reduce heat to low, and cook 10 minutes.
Season wit h salt and pepper.
Serve.

I was raised in a meat-loving family so I never was used to eating salads, nor do I know how to make vegetarian meals.
Now I have a medical condition that requires me to lay off red meat completely, and to have very minimal white meat.
I'm allowed to have some free range fish and eggs, but the diet is supposed to be based on vegies, lentils, chick peas, and such.
Please share some of your vegetarian recipes or links to help me out.

You like chick peas? Well lately I have been on a hummus kick - I bought some roasted garlic hummus (you may have to try a few brands to find what you like.... or you can make your own using a variation of the recipe found here: http://mideastfood.about.com/od/middleea鈥?/a>
Ingredients
Large leaf lettuce (romaine)
hummus
vegetables - you can use anything you like, but I use roma tomtoes, mushrooms, a couple of olives, and bell peppers)

salt/pepper to taste
WARM the pita first (it makes a difference, but you don't have to) and then spread about a table spoon of hummus over the pita. Add your veggies and salt and pepper fold and enjoy!
One of the staples at our home is Vegetable soup - especially since we live in Co and it has been chilly!
1 cup chopped yellow onion
4 stalks chopped celery
4 cloves chopped garlic
1 cup chopped carrots
2 large potatoes
1 - 2 cups lentils or barley
1 can chopped tomatoes - ITALIAN SEASONED - Del is the best
1/4 cup corn (optional)
1/2 cup fresh green beans (optional)
1/2 large bottle V-8
4 cups water
1 tablespoon pepper
salt to taste (about 2 tsp usually, but do it slowly as it cooks so you don't over salt as every pot is different and you don't want too much salt!)
1 tsp thyme
1 tsp italian seasoning (or your own combination of basil, oregano, bay leaf, etc)
First add your garlic, carrots, onion, and celery, spices, and a sprinkle salt and pepper (NOTE - at this point you can add any other herb you want - sometimes I use tumeric and curry for a differnt spice)and water and bring to boil.
Boil all of this for about an hour - till vegetables are 1/2 done, still a bit firm to the bite. The onions will be clear and the water will be a murky color. This is your broth.
Now add everything else, and a bit more water if needed and cook for another hour or so.
This should make enough for about 8 servings and freezes great!

Cucumber-Pasta Salad

* 1 teaspoon garlic salt

* 1/2 teaspoon pepper

* 3 medium cucumbers, seeded and coarsely chopped
* 3 stalks celery, thinly sliced
* 2 green onions, sliced
Cook pasta according to package directions.
Drain, rinse with cold water, and drain again.
Combine vinegar, oil, sugar, salt, dillweed, pepper and water.
Cover and shake well.
In a large bowl, combine pasta, cucumber, celery, and onions.
Add dressing, and toss to coat. Cover and chill.
Serves: 16
Preparation time: 90 min (prepare a day in advance)

* 12 garlic cloves, quartered
* 6 slices Italian bread, cut into 1-inch cubes
* 1/2 cup dry red wine
* 6 cups vegetable stock, canned or use my favorite homemade stock
* 1 tablespoons chopped fresh parsley
* salt and pepper to taste
In a heavy pot, melt butter with olive oil over low heat.
Add garlic and cook 2 minutes; be careful not to burn.
Add bread to pan and toss.
Add wine, stock, and parsley.
Bring to a boil over medium heat, reduce heat to low, and cook 10 minutes.
Season wit h salt and pepper.
Serve.

Put noodles in bottom of glass pan, pour sauce mixture over noodles; sprinkle with Cheddar cheese, then with Parmesan cheese last. Cover with foil and bake at 350 degrees for 35 minutes. Uncover and bake 10 minutes more. Makes 6 servings.

Make meatballs!
Try mixing the raw meat with moistened pieces of bread, a few eggs, Parmesan cheese, parsley and garlic.
Roll them with your hands into balls and place under the broiler until browned.

Southwestern Skillet Bake
1 pound lean ground beef
1 jar (16 ounces) Thick 'n Chunky salsa
1 can (11 ounces) whole kernel corn, drained
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup Original Bisquick庐 mix
3 eggs
1. Heat oven to 400潞F. Cook beef in 10-inch ovenproof skillet over medium-high heat 5 to 8 minutes, stirring occasionally, until brown; drain. Stir in salsa and corn; heat over medium-high heat until hot.
2. Reserve 2 tablespoons of the cheese. Stir Bisquick mix, eggs and remaining cheese in medium bowl until blended. Spoon batter around edge of beef mixture, leaving center uncovered. Sprinkle with reserved cheese.
3. Bake uncovered about 20 minutes or until golden brown and toothpick inserted in topping comes out clean.
Substitution
Use Green Giant庐 Mexicorn庐 whole kernel corn with red and green peppers instead of plain corn to add even more of a Southwest twist to this skillet bake.

Make cornbread batter and spread over top of bean mixture. Bake in 400 degree oven until cornbread is done in the center. Great served with fried potatoes.

On floured surface, unroll dough from 1 can of rolls. Press together perforations and roll dough to 12'; square. Press into pie plate and trim to 1 in. beyond edge of dish. Spoon meat mixture into dish.
Sprinkle with cheese. Spread french fried onions on top. Pour two unbeaten eggs over top. Unroll remaining roll dough; press together perforations and roll out to an 11'; square. Place on top of pie; trim and pinch together with bottom dough layer. Combine glaze ingredients, and brush over surface.
Bake at 350潞F for 40 minutes or till browned. Let stand 10 minutes before serving.

In a large skillet over medium-high heat, brown the ground beef with the onions. Drain excess fat, and season with salt and pepper to taste.
Spread the beef mixture evenly over the bottom of a 2 quart casserole dish. Arrange tater tots evenly over beef layer. In a small bowl, stir the soup into the milk until smooth; pour over tater tot and beef layers. Sprinkle Cheddar cheese evenly over the top.
Bake in preheated oven for 30 to 40 minutes, until cheese is bubbly and slightly brown.
Shepard's Pie -
1 Lb. Ground meat
1 bag mixed veggie
2 jars of beef gravy
Mashed potatoes to cover the top.
Saute ground meat in pan. Drain and put into casserole dish. Mix with gravy and veggies. Cover top with mashed potatoes. Season top with seasoning salt or garlic salt. Bake at 350 for 1/2 hour or until heated though. Enjoy.

Make meatballs!
Try mixing the raw meat with moistened pieces of bread, a few eggs, Parmesan cheese, parsley and garlic.
Roll them with your hands into balls and place under the broiler until browned.

Southwestern Skillet Bake
1 pound lean ground beef
1 jar (16 ounces) Thick 'n Chunky salsa
1 can (11 ounces) whole kernel corn, drained
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup Original Bisquick庐 mix
3 eggs
1. Heat oven to 400潞F. Cook beef in 10-inch ovenproof skillet over medium-high heat 5 to 8 minutes, stirring occasionally, until brown; drain. Stir in salsa and corn; heat over medium-high heat until hot.
2. Reserve 2 tablespoons of the cheese. Stir Bisquick mix, eggs and remaining cheese in medium bowl until blended. Spoon batter around edge of beef mixture, leaving center uncovered. Sprinkle with reserved cheese.
3. Bake uncovered about 20 minutes or until golden brown and toothpick inserted in topping comes out clean.
Substitution
Use Green Giant庐 Mexicorn庐 whole kernel corn with red and green peppers instead of plain corn to add even more of a Southwest twist to this skillet bake.

Simmer for six to eight minutes.
Serve bloody red with some cabernet sauvignon, broiled asparagus tips with hollandaise sauce and diced crab, hard-boiled eggs, a green salad and some French bread. Complete animalistic satisfaction from the blood and rare meat for a carnivore. Finish with a nice fruit and cheese plate and then some espresso with biscotti.

Clams and Chorizo with Tomato and Garlic
1. 2 garlic cloves, minced
2. 1/4 pound sweet or hot Spanish chorizo (spicy cured pork sausage), cut into 1/4-inch dice

4. 2 (14 ounce) cans stewed tomatoes
5. 4 pounds littleneck clams (2 inches in diameter), scrubbed
1. Cook garlic and chorizo in oil in a 4- to 6-quart heavy pot over moderate heat, stirring occasionally, until garlic is golden, 1 to 2 minutes. Add tomatoes and bring to a simmer, breaking up any large pieces. Simmer, uncovered, stirring occasionally, until sauce is thickened, about 15 minutes.
2. Stir in clams and cook, covered, over moderately high heat, stirring once, until clams open, 9 to 12 minutes. (Discard any that have not opened after 12 minutes.) Serve immediately.

1 Bunch green onions, minced

1 t Italian seasoning
1 c Dry white wine
1 c Clam juice

24 Cherrystone clams, cleaned
In large skillet, saute garlic and onion in butter and oil for 1 minute.
Add parsley and seasoning. Add wine, clam juice and water and cook 2
minutes. Now add clams and cook covered until clams open, about 10
to 12 minutes. Serve in bowls.
Linguni a le vongole. Add it to a basic red sauce with plenty of garlic, and add chopped parsley at the end. I dont' serve parmesan with this one.
deep fry it in beer batter. poor a can of light beer into a bowl mix with 1 and 1/3 cup of flower... ad a teaspoon of paprika... and pepper to taste then deepfry for 3 minutes.
clam and vodka sauce. make a pink vodka sauce i dont remember a recipe i just make it from scratch. add the clams and let it simmer for a while add over pasta and chicken cutlet and voila.

1) Remove intestines from clam meat. rinse in weak-salted water and drain.
(2) Cut off long, hairy ends of soy bean sprouts, wash, and drain.
(3) Discard tough stems from presoaked brackens. Cut off root and leaves from watercress and cut into 1-1/2 inch pieces.
(4) Wash rice and soak in water for 1 hour. Cut red peppers in half, remove seeds, and chop.
(5) Add sesame oil to pan and saut鈥?clam meat on high heat. Add ground beef to clam meat and saut鈥?together.
(6) Add 2 cups (40Occ) water to (5) and bring to boil hard. Add soy bean sprouts and brackens and boil 10 minutes again, seasoning with soy sauce.
(7) Drain rice in colander, pur鈥歟 in blender, add chopped red peppers, and pur鈥歟 together.
(8) Add (7) to (6) and stir well. When mixture thickens and binds together, add watercress and cook 1 minute until it is done.

12 Cloves fresh garlic, minced
1 Bunch green onions, minced
1/2 c Butter

In large skillet, saute garlic and onion in butter and oil for 1 minute.

deep fry it in beer batter. poor a can of light beer into a bowl mix with 1 and 1/3 cup of flower... ad a teaspoon of paprika... and pepper to taste then deepfry for 3 minutes.
clam and vodka sauce. make a pink vodka sauce i dont remember a recipe i just make it from scratch. add the clams and let it simmer for a while add over pasta and chicken cutlet and voila.

For 4 servings you will need:
2 tbsp. butter
1 clove garlic, peeled, optional
3/4 c. sliced green onions
3 sm. potatoes, cut into 1/2 inch cubes
1 c. water or dry white wine
3 c. milk
1 tsp. salt
1/4 tsp. white pepper
4 tbsp. all-purpose flour
4 tbsp. water
1 pkg. (6 oz.) frozen crab meat, thawed
1 can (8 oz.) minced clams, juice included
1 c. whipping cream, whipped, salted
Minced chives or parsley for garnish
1. Melt butter in heavy saucepan. Add garlic. Saute for 30 seconds. Add onions and potatoes. Saute 2 minutes or until vegetables are heated through.

You could marinate a rolled rump roast (or pork tenderloins) and do them on the rotisserie on the grill. Skirt %26amp; flank steaks are good, but better if you marinate them overnight:) .....We really just like thick ribeyes and I like Lawry's marinades (especially Baja Chipolte, hickory or mesquite). Don't forget to use smoking chips (charcoal) or smoking pellets (gas)

Ingredients:
4 ounces mild fresh goat cheese (Bucheron or Montrachet or ricotta cheese that has been drained for 30 minutes in a sieve lined with)

2 tablespoons minced parsley or cilantro
1/4 teaspoon salt
1/4 teaspoon black pepper
1 (5 lb) whole roasting chickens
2 tablespoons lime juice
Steps:
1. In a small bowl, combine the cheese, butter, parsley, salt, and pepper.
2. Carefully loosen the skin over the chicken breast with your fingertips and stuff the cheese mixture between the skin and the breast meat, arranging it in an even layer.
3. Pull the skin back into place and truss the chicken (optional).
4. At this point the chicken can be stored.
5. Transfer it to a platter, cover with plastic wrap, and refrigerate for up to 6 hours.
6. Preheat the oven to 475*F.
7. Rub the chicken with the lime juice and set it breast side up on a rack in a roasting pan.
8. Roast, uncovered, basting with the pan juices every 15 minutes, until golden-about 30 minutes.
9. Reduce the heat to 375*F.

1 pound lean ground beef
1/2 pound ground pork
1 medium onion, finely chopped
1 red or orange bell pepper, finely chopped

1/3 cup grated fresh Parmesan cheese
1 teaspoon Cajun seasonings
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup evaporated milk or whole milk
1/2 cup barbecue sauce
PREPARATION:
Cut bacon strips in half crosswise and coat with the 2 tablespoons of brown sugar. In a large skillet, cook the sugared bacon for about 2 minutes to render some of the excess fat. Or, cook on a paper plate in the microwave for about 1 minute.

some chopped celery and onion, sauteed in olive oil
1 t worchestershire sauce
3 egg
some milk (to add moisture if it needs it)
Mix it all in a bowl, shape it into a loaf, and bake it, preferably on a broiler pan or a rack (so the drippings drain away) at 350 for about 45 minutes - 1 hour. You can also add bacon strips to the top before putting it in the oven.
I usually buy 1-lb packages of the meat and mix them, divide them, and freeze 2 for later. Or you can make a giant meatloaf, but cook it longer (1 1/2 hours to 2 hours for all 3 lbs of meat).

2 pounds chopped meat
2 slices of bread
1 large onion
1 cup tomato sauce
1 egg

In mixing bowl add chopped meat, diced bread, diced onion, egg, 1/8 cup of tomato sauce, salt and pepper (mix).

2lbs extra lean hamburger or ground turkey
2 eggs
1 cup oatmeal
1/2 cup seasoned bread crumbs
1 1/2 teaspoon salt

1/2-1 teas. garlic powder, not salt
1 pkg dry onion soup mix
1 small can tomato sauce

Mix all ingredients together well with your hands. Place in a large 9x13 cake pan, shaping into a loaf shape in the middle of the pan, don't make it too thick. Bake at 350 degrees for an hour to an hour and a half. After a half hour spread the top of the meatloaf with ketchup and continue baking until done.

In mixing bowl add chopped meat, diced bread, diced onion, egg, 1/8 cup of tomato sauce, salt and pepper (mix).
Place in large pan pat to shape. Top with the rest of the tomato sauce.
Bake for 55 minutes at 350 degrees.
Take out and spread out bag of cheese on top of meatloaf and put back in oven until cheese is melted

2lbs extra lean hamburger or ground turkey
2 eggs
1 cup oatmeal
1/2 cup seasoned bread crumbs

1 pkg dry onion soup mix
1 small can tomato sauce

Mix all ingredients together well with your hands. Place in a large 9x13 cake pan, shaping into a loaf shape in the middle of the pan, don't make it too thick. Bake at 350 degrees for an hour to an hour and a half. After a half hour spread the top of the meatloaf with ketchup and continue baking until done.

6 tablespoons of sugar (takes the acid out of the tomato)
Peel then grate the carrots with the large end of the cheese grater. Do the same with the celery (don't peel me) and the Granny Smith apple.
Dice the onions and slice the garlic. Remove seeds and chop the Habanero peppers into small or large pieces, your preference.
Brown the garlic and the onions for about 7-10 minutes. (Note: be careful not to overbrown garlic!)
Add the grated carrots and celery and cook for a few minutes more.
Add spices, beans, tomato sauce and tomato paste. Let the paste dissolve into the sauce then add the sugar. Then add the chopped Habaneros and simmer for 20 minutes.
If you are using 5 this chili is super hot. If you like it this way forget the Granny Smith. Add the Granny Smith apple and cook for 10 minutes more. The Granny Smith gives it even more body and a thick Chile results.
Makes Five Quarts.
Serve and Enjoy.

1 bag Nacho Cheese Doritos
1 cup shredded Colby cheese
1 jar Pace Picante Sauce (chunky)
1 jar jalepenos
2 tbs. sour cream
1 small can black olives
Take about 20-25 chips and place onto a microwavable safe plate.
Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave).
Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos.
Serve. Enjoy this fast and easy dish. It's a great meal at a cheap price for larger families. The kids will love it. Add lettuce or any other variety of ingredients to your liking.

It is easy to use and contains a great deal of information about each recipe, such as cooking and preparation times, and the difficulty. Be aware though on occasion it will include an ingredient which is often overlooked as not being vegetarian, such as parmesan cheese.What are some great vegetarian recipes that DON'T use fake meat?
I unfortunately also did the Mexican overkill thing. The Jenville Show has many recipes that are vegetarian or even vegan and amazing (and from rockstars...).
Actually, I think I found my all-time favourite recipe on there. You get a bunch of cherry tomatoes (I use between 6 and ten depending on how hungry I am) and some mozarella balls (6 tomatoes = 3 mozarella balls, 8 tomatoes = 4 mozarella balls, 10 tomatoes = 5 mozarella balls). I personally prefer BelGioso mozarella balls. Chop the tomatoes into halves and chop the mozarella balls into quarters. Mix them all in a bowl. Then pour a dash of extra-virgin olive oil over them and add balsamic vinegar to your own taste. You can also add fresh or ground basil.
This particular recipe can also be varied if you add pasta or just spinach or lettuce leaves. It's a good recipe because it's quick and easy (under 5 minutes) and you can make as much as you want.

1/2 lb. dried rice noodles (width of linguine)
1/4 cup fresh lime sauce
2 Tbs. soy sauce
2 Tbs. brown sugar
1 to 2 tsp. hot chile sauce
2 tsp. peanut oil

1 to 2 tsp. peeled, minced fresh ginger
1 medium carrot, peeled and cut into narrow strips
8 to 10 green onions, halved lengthwise, then cut into 2-inch lengths
1 cup mung bean sprouts
2 Tbs. chopped dry-roasted peanuts
1 lime sliced (optional)
1/4 cup chopped fresh cilantro
In large bowl, soak rice noodles in warm water to cover until they are limp and white, about 20 minutes.
While noodles are soaking, combine lime juice, soy sauce, sugar, chile sauce and 1 tablespoon water in small bowl.
In wok or large deep skillet, heat oil over high heat. Add garlic and ginger and stir-fry 30 seconds, then add carrot strips and green onions and stir-fry 1 minute.
Add lime juice mixture. Drain noodles and add to wok, tossing with tongs until they soften and curl, about 1 minute. Add sprouts. Divide mixture among serving plates, sprinkle with peanuts and garnish with a slice of lime and cilantro if desired.

Choctaw Catfish
4 (4 ounce) fillets catfish
2 cups buttermilk
1 cup yellow cornmeal
1/2 tablespoon onion salt
1 tablespoon steak seasoning
1/4 cup vegetable oil
In a medium bowl, place catfish fillets in buttermilk. Cover, and marinate in the refrigerator 45 minutes.
In a resealable plastic bag, mix cornmeal, onion salt, and steak seasoning. One at a time, drain catfish fillets and place in the bag to coat with the cornmeal mixture.
Heat oil in a large, heavy skillet over medium heat. Fry each fillet 7-10 minutes per side, or until exterior is lightly browned and flesh is easily flaked with a fork. Drain on paper towels.
Herbed Halibut
1 (2 pound) halibut fillet
1 large lemon, quartered
1 cup olive oil
1 teaspoon sea salt
1 teaspoon garlic powder
1 tablespoon dill weed
Preheat the oven's broiler and coat a baking sheet or broiling pan with olive oil.
Rinse the fish and pat dry. Place on the greased pan, and brush with olive oil or coat with olive oil cooking spray. Squeeze the juice from the lemon wedges over the entire fillet, and season generously with salt first, then garlic and finally dill.

Ingredients
1录lb/550g pasta verde or 1lb/450g dried green lasagne
salt
olive oil
1.5kg/3.5lb fresh spinach
1 egg, lightly beaten (for the spinach balls)
2 tbsp dried breadcrumbs
150g/5oz fresh grated parmesan cheese
nutmeg
freshly ground black pepper
2 eggs, lightly beaten (for coating the aubergines and courgettes)
2 large aubergines, cut lengthwise into 5mm/录in slices
100g/4oz white flour
2 large courgettes, cut lengthwise into 5mm/录inch slices
300g/11oz fresh oyster mushrooms or shiitake mushrooms, slices
1 clove garlic, peeled and chopped
1 tbsp chopped parsley
double quantity sugo di pomodoro - tomato sauce
300g/11oz fontina cheese, cut into chunks
7 eggs, lightly beaten (for assembling the lasagne)
Method
1. Preheat the oven to 375F/190C/gas5.
2. To make lasagne: roll out the pasta dough (if using fresh) on a lightly floured surface to make a single sheet3mm/1/8in thick. Cut into rectangles about 10x20cm/4x8in in size.
3. Cook the fresh or dried pasta, adding the pieces one by one to boiling water to which you have added salt and 1 tbsp of oil, to prevent the pasta sticking. Allow 5 minutes cooking time for fresh pasta, 8-10 minutes for dried. Carefully remove the pasta and pat dry on clean tea towels.
4. To make the spinach balls: cook the spinach in a little water until tender, drain well and chop finely. Mix the spinach in a little water until tender, drain well and chop finely. Mix the spinach with 1 tbsp beaten egg, the dried breadcrumbs and 25g/1oz of the parmesan cheese. Add nutmeg, salt and pepper to taste. Using your hands to shape the spinach mixture into walnut-sized balls.

6. To prepare the aubergines: put half of the other 2 beaten eggs in a dish. Dip the aubergine slices into the flour and then into beaten egg. Heat enough oil to deep fry the aubergine, until golden. Remove with a slotted spoon and set aside on paper towels.
7. Prepare the courgettes in the same way as the aubergines, dipping them into flour and beaten egg, then deep frying them. Set aside on paper towels.
8. To prepare the mushrooms: heat 1 tbsp oil in a separate frying pan, add the mushroom slices and fry briefly. Stir in the garlic and parsley with salt and pepper to taste.
9. To assemble the lasagne: put 3-4 tbsp tomato sauce on the bottom of a large baking dish. Cover with a layer of pasta. Next add a layer each of the mushrooms, the courgettes, aubergine and spinach balls. Add some of the fontina cheese. Now add 3-4 tbsp tomato sauce, 3-4 tbsp of the beaten eggs and a generous sprinkle of the remaining parmesan cheese.
10. Starting with a layer of pasta repeat the sequence of layers until the ingredients are all used, finishing with a layer of vegetables.
11. Bake for 20 minutes. Cut into portions and serve.

Mix all together and add some lemon juice - voila.
Baked rice... rice with tomato sauce and vegetables and topped with cheese, all baked in the oven. Great vegetarian meal

Baked fish: put fish on a double layer of aluminum foil with butter and lemon pepper , surround it with veges like onions zucchini sliced green pepper and tomato ( or any other veges you like)seal the foil and put it on the grill for about a half hour turning few times. Open it up and TAA DAA supper is ready and you haven't any Pots and Pans to wash either!

1 tab reduced calorie margarine (or 2 tsp oil)
1 medium onion, chopped
1 cup long-grain rice

In large saucepan, saute onion till golden add rice and stir. Stir in rice ; cook, stirring constantly 1 minute. Gradually stir in broth;cook;covered on low for 20 minutes or until rice is cooked. Stir in salmon and cheese. Cook to heat through and melt cheese.
Serve with Asparagus and cucumber dill salad:
Dice and seed 陆 cucumber per person. Mix with plain yogurt, dill and salt to taste.

Prepare pastry in 9in pie plate
Sprinkle in pie shell:
1 cup grated cheddar cheese
1 (73/4 ounce) can salmon, flaked
4 green onions, thinly sliced

陆 tsp dry mustard
Pour into pie shell.
Sprinkle with paprika
Bake in preheated 400 degree oven for 30 to 35 minutes or until filling is set around the edge and soft in the centre. Remove from oven and let stand for 15 minutes before serving. Makes 6 servings.
Get a bag of frozen cheese ravioli. boil a pot of water . once water is boiling put the ravioli in. Cook until very hot inside, usually about 4-5 minutes.
while raviloi is cooking in a pot or deep-skillet, fry up some green peppers and onions. once they're browned pour in a jar or two of your fave pasta sauce. let it simmer for about 10 minutes. then throw in your ravioli. let simmer an add'l 15 minutes so it can soak up all the different flavors. and eat with garlic toast. mmm...good stuff.

* 2 tbsp Vegetable oil
Method:
* Heat the oil in a large wok and stir fry onions and garlic with vegetables for 3 minutes over high heat while stirring frequently.
* Add prawns, fish sauce and soy to the vegetables, season with fivespice and chilli flakes and cook for another 3 minutes.
* Add the cooked rice to the wok and toss well.
Garlic and herb Tagliatelle with tomatoes,spring onions,mushrooms,garlic and sardines. Put all the ingredients (apart from the fish) into a pan and cook for approximately 10-15 minutes. Turn the heat down and allow to simmer. Bring a pan of water to the boil and add the pasta. Bring back to the boil and cook for 5-8 minutes. Add the fish to the other ingredients. Keep both pans warm and grate some cheese. Sprinkle cheese over the top. Serve with some crusty bread. Delicious.
Get some Quorn veggie mince, really flavour it with lea n perrins, tomato puree and a small tin on baked beans..........then cook some lovely mash pop in the oven for 25 mins and a fab shepherds pie will appear. I make this a lot and meat eaters really love it too!

Chicken Parmigiana
Ingredients:
1 egg, beaten
2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
1 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 package angel hair or thin spaghetti pasta
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.
Prepare pasta according to package directions, drain water and serve with chicken and sauce. Great served with salad , garlic toast and a nice bottle of wine.
Antipasto Pasta Salad
1 pound shell, bowtie or elbow macaroni pasta
1/4 pound Genoa salami, chopped
1/4 pound pepperoni, chopped
1/2 pound Asiago or Italian sharp cheese, diced
1 (6 ounce) can black olives, drained and chopped
1 red bell pepper, diced
1 green bell pepper, diced
3 ripe tomatoes, chopped
1 (.6 ounce) Italian dressing mix (Good Seasons)
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons dried oregano
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
salt
ground black pepper
Cook the pasta in a large pot of salted boiling water
until al dente. Drain and cool under cold water.
In a large bowl, combine the pasta, salami, pepperoni,
cheese, black olives, red bell pepper, green bell pepper
and tomatoes. Sprinkle on the envelope of powdered dressing,
mix thoroughly and refrigerate salad.
To prepare the dressing, whisk together the olive oil,
balsamic vinegar, oregano, parsley, parmesan cheese, salt
and pepper. Just before serving, pour dressing over the
salad and mix well.
Easy Elegant Skillet Chicken Supreme
INGREDIENTS
1/2 cup dried bread crumbs
4 tablespoons all-purpose flour, divided
1 cup ice water
1 pound skinless, boneless chicken breasts
1/4 cup olive oil
1 cup fresh sliced mushrooms
1/2 cup chicken broth
1/2 cup white wine
2 ounces shredded mozzarella cheese
DIRECTIONS
In a shallow dish or bowl, combine bread crumbs and 3 tablespoons flour. Dip chicken into ice water, then dredge through crumb mixture. In a medium skillet, heat oil over medium high heat. Add chicken and saute until both sides are lightly browned and chicken is cooked through (juices run clear). Remove chicken from skillet and set aside, keeping warm.
To same skillet add mushrooms and saute. Sprinkle with remaining 1 tablespoon flour and stir quickly to mix together. Add broth and wine and let simmer, stirring, until thickened (about 2 minutes).
Return reserved chicken to skillet. Top with cheese. Cover and cook until cheese is melted. Serve over rice. Yummy

';This recipe came from my mom. It takes little time since it requires basting, but the end result is worth it. Makes a truly elegant meal served with mashed red potatoes and a green vegetable.';
INGREDIENTS (Nutrition)
1 (4 pound) boneless pork loin roast
1/4 cup Dijon mustard
2 tablespoons packed brown sugar
1 1/2 cups apple juice, divided
1 cup pitted prunes
1 cup dried apricots
3/4 cup red wine
1/4 cup packed brown sugar
1/8 teaspoon ground cloves
2 teaspoons cornstarch
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
Place the roast in a shallow roasting pan. Mix together the mustard and 2 tablespoons of brown sugar; spread over the roast.
Roast for 3 hours in the preheated oven, basting with 1/4 cup of apple juice every 30 minutes. Roast is done when the internal temperature reads 160 degrees F (70 degrees C).
During the last hour the roast is cooking, combine the prunes, apricots, red wine, 1/4 cup brown sugar, 3/4 cup of the juices from the roasting pan, and cloves in a saucepan over medium heat. 2-2/3 cups all-purpose flour

Split the chicken breast almost all the way through then spread out and beat to flatten, it's kind of a heart shape, then brush with beaten egg and coat in a breadcrumb mixture containing grated parmesan and breadcrumbs (obviously!) don't forget to season, then shallow fry with a little olive oil.
when cooked, transfer to a chopping board and carefully slice into strips. (keeping the breast in it's original shape)
I serve this on tagliatelle with a simple tomato sauce, by sliding a large knife or spatula under your chicken breast you should be able to lay it on top of the pasta without losing the lovely heart shape.
Have only just noticed you said no pasta, would work with most accompaniments i think.

1 broiler chicken, about 3 pounds, cut in parts
4 slices bacon
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 cup chopped celery
1/2 cup chopped onion
1 green bell pepper, chopped
2 cloves garlic, minced
2 cups fresh tomatoes, chopped
2 teaspoons Madras curry powder
1/2 teaspoon thyme leaves
1 cup chicken broth, hot
1/2 cup currants or raisins
1 tablespoon chopped fresh parsley
1/2 cup slivered toasted almonds
In Dutch oven or deep frying pan, cook bacon until crisp.
Remove bacon to paper towels to drain; crumble and set aside.
Add chicken parts to the pan; cook for about 15 minutes, turning, or until browned. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon of pepper; transfer to an ovenproof dish and keep warm.
To pan drippings, add celery, onion, bell pepper, and garlic; cook, stirring, until onion is transparent, about 5 minutes. Add tomatoes, curry powder, thyme and 1/2 teaspoon of salt. Bring to a boil, reduce heat, cover and simmer for about 10 minutes.
Place currants in a small bowl, pour hot chicken broth over them; let stand for 20 minutes or until plump.
Return chicken to the pan; cover and cook for 20 minutes.
Add currants and broth; cover and cook for another 10 minutes or until chicken is done. Sprinkle with parsley, crumbled bacon and toasted almonds. Serve on rice.

You could do 3 courses, an appetizer dinner and dessert. Start by lighting a few candles, setting the table, and his favorite wine. For the app. make a carpacio salad, bruscetta, butternut squash soup, or an antipasto plate with cheese and olives. For supper make duck, prime rib, or lamb. For the side make asparagus or mashed potatos. For dessert share chocolate covered strawberries.
Romance? Then don't make it too complicated or you'll be romancing the food instead of him! You can do a Roast Pork with oven baked potatoes - do it all ahead of time then you can sit back and relax - you can do it all in the same pan and then just do a simple veggie on the side or bake a couple of cored peeled apples in the same baking pan. Here's my recipe that my kids (21,20, 9 yrs old ) all love.
get a 2-3 lb center cut pork roast, 8 - 10 small potatoes, about a 1/4 lb of bacon, 1 medium sized onion, 5 small to average sized apples, chopped garlic, Italian seasoning, sage, parsley, onion powder, about 1/2 cup or so of oil, 2 teaspoons Worcestershire sauce
wash the roast, coat the bottom of the pan with oil, and put the roast in. put aside two slices of bacon, chop up the rest, mix in a bowl with 2 tablespoons of chopped garlic, 1/2 the onion chopped finely, 1 teaspoon Italian seas, 1/2 tsp sage, 1 tsp parsley, 1 tsp onion powder, and 1/2 cup of oil, mix up. peel and core the apples, cut rings from one of them - keep the others whole - slice about a 1/4 inch thick, put aside how many you need to cover the top of the roast (probably 3 or 4 slices) and mince the rest of that apple, put in the mix. take a sharp knife and cut X's into the roast - go straight down from the top - about every inch or so, and stuff as much of the mix as you can into each X - I find it easier but messier to use my hands. save the rest of the mix - there will be a lot left over. cover the top of the roast with the slices of bacon you put aside, put in a 350 degree oven for about 45 minutes - uncovered. while that is in the oven, peel your potatoes, cut to about two inch size pieces, put in the mix. chop the rest of the onion into larger pieces, add them and the Worcestershire sauce to the mix, stir up. Take the roast out of the oven, line the sides of the roast with the mix, nestle the apples in there (you could sprinkle them with cinnamon sugar if you wanted to), put the apple slices on top of the roast, cover and cook for another 45 minutes, after about 20 minutes, pull out and carefully stir the potatoes, then after 45 min, take the cover off and turn the heat up to 450 for 20 minutes or so so everything gets nice and brown. If you don't want to mess with the apples, serve apple sauce - but the apples look really cool on the plate. I plate everything right from the stove - then I don't have to deal with clearing the serving dishes off the table, but thats' up to you. enjoy!
Beef Stroganoff
1 lb. round steak - well-trimmed and cut into strips
Season strips and dredge in flour.
Melt 1 stick margarine in skillet and brown strips of meat. Near the end of browning, add:
1/2 chopped onion
1 clove minced garlic
1 small can sliced mushrooms
1 cup beef broth or bouillon
Cover and simmer 30-45 mins. until tender.
Reduce heat to very low and add 8 oz. sour cream. Stir until well-blended and warm.
The sauce is scrumptious on rice, but it could be served over noodles if you prefer.

Ingredients:
1 egg, beaten
2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
1 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 package angel hair or thin spaghetti pasta
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.
Prepare pasta according to package directions, drain water and serve with chicken and sauce. Great served with salad , garlic toast and a nice bottle of wine.
Antipasto Pasta Salad
1 pound shell, bowtie or elbow macaroni pasta
1/4 pound Genoa salami, chopped
1/4 pound pepperoni, chopped
1/2 pound Asiago or Italian sharp cheese, diced
1 (6 ounce) can black olives, drained and chopped
1 red bell pepper, diced
1 green bell pepper, diced
3 ripe tomatoes, chopped
1 (.6 ounce) Italian dressing mix (Good Seasons)
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons dried oregano
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese

Cook the pasta in a large pot of salted boiling water
until al dente. Drain and cool under cold water.
In a large bowl, combine the pasta, salami, pepperoni,

INGREDIENTS

1 pound skinless, boneless chicken breasts

Remove bacon to paper towels to drain; crumble and set aside.
Add chicken parts to the pan; cook for about 15 minutes, turning, or until browned. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon of pepper; transfer to an ovenproof dish and keep warm.
To pan drippings, add celery, onion, bell pepper, and garlic; cook, stirring, until onion is transparent, about 5 minutes. Add tomatoes, curry powder, thyme and 1/2 teaspoon of salt. Bring to a boil, reduce heat, cover and simmer for about 10 minutes.
Place currants in a small bowl, pour hot chicken broth over them; let stand for 20 minutes or until plump.
Return chicken to the pan; cover and cook for 20 minutes.
Add currants and broth; cover and cook for another 10 minutes or until chicken is done. Sprinkle with parsley, crumbled bacon and toasted almonds. Serve on rice.

You could do 3 courses, an appetizer dinner and dessert. Start by lighting a few candles, setting the table, and his favorite wine. For the app. make a carpacio salad, bruscetta, butternut squash soup, or an antipasto plate with cheese and olives. For supper make duck, prime rib, or lamb. For the side make asparagus or mashed potatos. For dessert share chocolate covered strawberries.
Romance? Then don't make it too complicated or you'll be romancing the food instead of him! You can do a Roast Pork with oven baked potatoes - do it all ahead of time then you can sit back and relax - you can do it all in the same pan and then just do a simple veggie on the side or bake a couple of cored peeled apples in the same baking pan. Here's my recipe that my kids (21,20, 9 yrs old ) all love.
get a 2-3 lb center cut pork roast, 8 - 10 small potatoes, about a 1/4 lb of bacon, 1 medium sized onion, 5 small to average sized apples, chopped garlic, Italian seasoning, sage, parsley, onion powder, about 1/2 cup or so of oil, 2 teaspoons Worcestershire sauce
wash the roast, coat the bottom of the pan with oil, and put the roast in. put aside two slices of bacon, chop up the rest, mix in a bowl with 2 tablespoons of chopped garlic, 1/2 the onion chopped finely, 1 teaspoon Italian seas, 1/2 tsp sage, 1 tsp parsley, 1 tsp onion powder, and 1/2 cup of oil, mix up. peel and core the apples, cut rings from one of them - keep the others whole - slice about a 1/4 inch thick, put aside how many you need to cover the top of the roast (probably 3 or 4 slices) and mince the rest of that apple, put in the mix. take a sharp knife and cut X's into the roast - go straight down from the top - about every inch or so, and stuff as much of the mix as you can into each X - I find it easier but messier to use my hands. save the rest of the mix - there will be a lot left over. cover the top of the roast with the slices of bacon you put aside, put in a 350 degree oven for about 45 minutes - uncovered. while that is in the oven, peel your potatoes, cut to about two inch size pieces, put in the mix. chop the rest of the onion into larger pieces, add them and the Worcestershire sauce to the mix, stir up. Take the roast out of the oven, line the sides of the roast with the mix, nestle the apples in there (you could sprinkle them with cinnamon sugar if you wanted to), put the apple slices on top of the roast, cover and cook for another 45 minutes, after about 20 minutes, pull out and carefully stir the potatoes, then after 45 min, take the cover off and turn the heat up to 450 for 20 minutes or so so everything gets nice and brown. If you don't want to mess with the apples, serve apple sauce - but the apples look really cool on the plate. I plate everything right from the stove - then I don't have to deal with clearing the serving dishes off the table, but thats' up to you. enjoy!
Beef Stroganoff
1 lb. round steak - well-trimmed and cut into strips
Season strips and dredge in flour.
Melt 1 stick margarine in skillet and brown strips of meat. Near the end of browning, add:
1/2 chopped onion
1 clove minced garlic
1 small can sliced mushrooms
1 cup beef broth or bouillon
Cover and simmer 30-45 mins. until tender.
Reduce heat to very low and add 8 oz. sour cream. Stir until well-blended and warm.
The sauce is scrumptious on rice, but it could be served over noodles if you prefer.
