Soup isn't really a summer dish but one that my family and friends love.. I put the leftovers in small containers to take to work for lunch.
Broccoli Crab Bisque
1/2 cup sliced leeks or green onions (white portion only)
1 cup sliced fresh mushrooms
1 cup chopped fresh broccoli florets
1 garlic clove, minced
1/4 cup butter or margarine
1/4 cup all-purpose flour
1/2 teaspoon dried thyme
1/8 teaspoon pepper
1 bay leaf
3 cups chicken broth (canned works fine)
1 cup half-and-half cream
1 cup shredded Swiss cheese
1 can (6 oz.) crabmeat, drained, flaked and cartilage removed (I use imitation crab meat)
In a large saucepan, saute leeks, mushrooms, broccoli and garlic in butter until tender. Add flour, thyme, pepper and bay leaf; mix well. Stir in the broth and cream. Bring to a boil; cook and stir for 2 min. or until thickened.
Add the cheese and crab; stir until cheese is melted and soup is heated through. Discard bay leaf before serving.What are some recipes using imitation crab meat?
I went to a chinese buffet a few weeks ago and they cooked (melted) butter and with slices of lemon and had the imitation crab in chunks like it came out of the package-it actually tasted good!
I have made a crab salad w/ mayo, chopped celery and seasoning and put it on a crossiant.
I've put it on top of salads.
I've dipped it in shrimp cocktail sauce as a snack!What are some recipes using imitation crab meat?
It needs to be smothered with cheese and sauce, to disguise the flavor...... so a hot crab dip might work, or a casserole. Don't try to pass it off as real crab in a crab salad, because it doesn't taste anything like real crab
I put the artificial (pollack) ';crab meat'; into my tuna noodle casserole.
Use rather than Tuna in a noodle casserole.
