Got any Recipes for Alligator. Seriously. I need a good recipe for cubed alligator meat !?

I'd prefer something with pineapple juice which I know is a natural tenderizer. How long before the pineapple juice starts to actually disolve meat?Got any Recipes for Alligator. Seriously. I need a good recipe for cubed alligator meat !?
You can use alligator in any recipe that you would normally use to cook chicken. You can marinate the meat in juice or any other acid to tenderize it--as little as 30 minutes will help, but you can marinate for several hours if you have the time. Just be sure to keep the meat cold while marinating. Here's a recipe for you (or just look for a recipe using chicken and sub in the gator):


Sweet and Sour Alligator


Serves 6





Ingredients:


1 1/2 pounds Alligator tail meat, cut in 3/4-inch cubes


2 eggs, beaten


1/4 cup plus 2 tablespoons all purpose flour


2 tablespoons milk


1 teaspoon salt


4 cups vegetable oil for deep-frying


1 cup pineapple juice


1/3 cup firmly packed brown sugar


3 tablespoons cornstarch


1 8 ounce can tomato sauce


1/3 cup cider vinegar


1/3 cup light corn syrup


1/2 teaspoon garlic salt


1/4 teaspoon black pepper


1 8-ounce can unsweetened pineapple chunks, drained


1 medium bell pepper, cut into 1-inch squares


2 celery stalks, sliced thinly


1/2 medium onion, thinly sliced


hot cooked rice





Directions:


Combine eggs, flour, milk and salt; mix well. Add alligator cubes, stirring to


coat.





In a 2-quart deep fryer, heat vegetable oil to 350潞F. Deep fry alligator, a few


pieces at a time, until golden brown. Drain well.





In a 4-quart saucepan, combine pineapple juice, brown sugar, cornstarch, tomato


sauce, vinegar, corn syrup, garlic salt and black pepper. Stir well. Cook over


medium heat, stirring constantly, until thickened. Stir in alligator chunks,


pineapple, bell pepper, celery and onion. Cover and simmer 10 minutes. Serve

Wow, such complicated things.





My recipe is simple.





Pineapple juice [canned]


Soy sauce [not a lot]


brown sugar


a tablespoon of flour to thicken it





Cube the meat, and slide large metal skewers through it. Remove the skewers and toss the meat in a zipper style bag along with the above mix. It doesn't matter how much of eat you use, this is YOUR meal so use as much or as little as you want.





The citrus content of the pineapple will start to break it down and tenderize it in four to six hours but for the best results, let it sit overnight and give the bag a squeeze from time to time so everything gets moved around. Now, this is just what I have been told, but it is female then you should add a few table spoons of regular white sugar because the meat is a little tougher but I have never really found it to be true.





A nice twist to this to to insert a garlic clove into each piece then when you slide the skewer into it, it pops out but you get a LOT of rich flavor from it. I have only grilled the gator meat that I have cooked ... some have put it in a crock pot with vegetables but that's not 'me' LOL.

Recipe Instructions: In a deep frying pan saut茅 the bell pepper, garlic, parsley, and celery. While this is cooking place the tomatoes (un-drained), chicken stock, and green onion in a pot that can cook on the stove and in the oven (corning ware). Stir in spices, saut茅ed vegetables, raw rice,


sausage, and alligator pieces. Cook on medium high until liquid is absorbed, stirring occasionally to ensure the rice doesn't burn to the bottom. Bake covered in the oven for 25 minutes.





Ingredients:





1 lb marinated alligator filet cut into small pieces


1 lb Italian sausage cut into chunks


3 T oil


2/3 cup bell peppers, chopped


2 Garlic cloves, chopped


3/4 cup Parsley


1 cup chopped fresh parsley


1 cup chopped celery


2 can tomatoes (16 oz each)


2 cups chicken stock


1 cup green onions


2 t oregano


2 dashes red hot sauce (optional)


Cajun spices (blackened or Cajun king herbed spice) to taste


Salt - to taste


2 cups raw white rice
