Raw dark meat turkey recipes anyone?

I had a whole turkey and since Thanksgiving we have already consumed two large roasted turkey's and the typical leftovers such as sandwiches, soup, stew, croquettes etc.. I decided to defrost the whole THIRD bird that I had and cut it up. I made turkey cutlets with the breast meat last night. Any suggestions for the dark meat? I'm stumped. Thanks!! Oh...I do have a ton of broth and some gravy left as well.Raw dark meat turkey recipes anyone?
Oaxacan Green Mole turkey and white beans





2 cups cooked white beans (canned beans work well)


3 lb Dark turkey meat with or without bones, no skin


2 cups broth


1 medium white onion cut into chunks


6 large garlic cloves peeled


1 carrot, scrubbed and cut into chunks


1/4 tsp crushed red pepper


1/2 lb fresh tomatillos, husked, rinsed, and quartered


3 large jalapeno chilis (3 ounces), seeded, veins removed, and chopped


1 tsp ground cumin


1/2 tsp ground allspice


1/8 tsp ground cloves


1 tbsp vegetable oil


3/4 cup loosely packed flat leaf parsley


1 tsdp dried Epizote (Mexican grocery Spice section)


1/2 cup loosely packed Cilantro leaves chopped


2 tbsp Masa Harina (corn flour) corn meal will work


1/2 tsp salt or to taste


1/4 tsp black pepper or to taste


1/2 tsp sugar or more if sauce is too tart





1.) Prepare beans and reserve, or open cans when needed. Put turkey chunks in serving size pieces into a large pan. add the broth and 1 cup of water, half of the onion, half of the garlic, the carrot and the crushed red pepper. Bring to a boil, then reduce the heat and simmer the turkey, covered, until tender, 30 to 35 minutes. Remove the meat pieces to a bowl and cover to keep moist.Pour the cooked broth through a strainer into a bowl, and reserve for the sauce. Discard the solids.





2.) In a blender or food processor, blend the tomatillos, jalapenos, cumin, allspice, cloves, the remaining 1/2 onion, and the remaining garlic. add one cup of your retained broth, and blend until smooth. be careful hot broth may make the blender pop its top off.





3.) In a large sauce pan, heat the oil until it shimmers. Slowly pour in the tomatillo mixture (so it won't splatter), and cook, stirring frequently, 5 minutes.





4.) In the same blender jar, blend the parsley, Epizote, cilantro, masa, salt, pepper, sugar, and 1/2 cup of your reserved broth. puree until smooth, and pour into the pan with the sauce. Cook over low heat, stirring frequently to prevent sticking, 20 minutes. Add the cooked turkey and the white beans. Simmer partially covered, 10 to 15 minutes to heat through and blend flavors. Adjust seasoning to taste, and serve hot.





Epizote can be left out of this recipe, but it does affect taste. Epizote instills a slight numbing to the tongue that really brings out the other flavors.Raw dark meat turkey recipes anyone?
Use a food processor to grind it and then make chili:





Simple Turkey Chili





1 1/2 teaspoons olive oil


1 pound ground turkey


1 onion, chopped


2 cups water


1 (28 ounce) can canned crushed tomatoes


1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed


1 tablespoon garlic, minced


2 tablespoons chili powder


1/2 teaspoon paprika


1/2 teaspoon dried oregano


1/2 teaspoon ground cayenne pepper


1/2 teaspoon ground cumin


1/2 teaspoon salt


1/2 teaspoon ground black pepper





Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.


Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.



Take the turkey thighs (skin on) and rub each one with a little oil (olive, vegetable, canola) Sprinkle seasoning salt or whatever spices you like on both sides of the thighs. Place in a baking pan. Cover the pan tightly with foil and bake for 3 hours at 300 degrees. Remove from oven and discard the skin. The turkey comes out wonderfully moist and tender. This can also be done with the drumsticks. Good Stuff!
You can always do a turkey pot pie and add which ever vegi's you want.


For mine I use potatoes, mushrooms, lots of celery and some carrots and onion.





The dark meat works perfect for this since it's nice and juicy and tender.



bread it and fry it like chicken, its awesome, serve it up with some mashed potatoes and your gravy
In my experience, dark meat is best for soup because it doesn't dry out like white meat does in the broth.
