Slow Cooker Chile Verde
3 tablespoons olive oil
1/2 cup onion, chopped
2 cloves garlic, minced
3 pounds boneless pork shoulder, cubed
5 (7 ounce) cans green salsa
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can diced tomatoes
Heat the oil in a large skillet or Dutch oven over medium heat. Add the onion and garlic; cook and stir until fragrant. Add the cubed pork, and cook until browned on the outside. Transfer the pork, onions, and garlic to a slow cooker, and stir in the green salsa, jalapeno peppers, and tomatoes.
Cover, and cook on High for 3 hours. Reduce the setting to Low, and cook for 4 to 5 more hours.I have leftover meat from when i made pork shoulder. what recipes would be good to make it in a slow cooker?
Tangy Sliced Pork Sandwiches
1/4 cup butter
1/4 cup Worcestershire sauce
2 tablespoons lemon juice
2 tablespoons white sugar
1/4 teaspoon paprika
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 pound boneless pork, cooked and cubed
4 hamburger buns
Melt butter or margarine in a large saucepan over medium heat. Add the Worcestershire sauce, lemon juice, sugar, paprika, salt and cayenne pepper. Mix together and bring mixture to a boil, stirring often. Add the cooked pork and let simmer just until pork is heated through. Divide into 4 equal portions onto the bottom of each hamburger bun.

If you want to do pulled BBQ pulled pork sandwiches then you cook either in the crock pot or in the oven with a lot of water and on low. Once it is done and shredded you add the BBQ sauce and can cook it for an hour or two.
I haven't tried it but my friend worked at this local restaurant with pulled pork sandwiches. They would cook the meat, shred it, then put it it large pot of BBQ sauce and marinade it in the fridge for 24 hours. Cook it for an hour then serve on buns.
If you want to try something other then BBQ sandwiches then you could do a stir fry with the leftovers. Here's a link to a good recipe:

Pulled pork sandwiches just put it in the crock pot with seasoning and water or stock and cook on low until the meat is tender. you can eat it plain or add bbq sauce. that would go well in a stew also.
Chile verde! just add a can of las palmas green chile enchilada sauce and a packet of lawry's fajita packet with like 1 cup of water and let it simmer.

Toss it into the slow cooker with your favorite BBQ sauce. Shred, and make sandwiches.
